Ingredients

½ Kg Ratalu (Purple Yam)
Oil for frying
150 gms Curd
Salt to taste
1/2 cup Ghee
1 tsp Red Chili powder
25 gms Garam masala powder
1 tbsp Ginger paste
1 tsp Coriander powder
1/2 tspn Turmeric powder
1/2 tsp Cumin Seeds
Pinch Asafoetida
Pudina dry crushed - 1/2 tspn

Instructions

Peel and Dice ratalu into discs/ cubes. Deep fry in oil. Frying should be done on low-medium heat.
Meanwhile, heat oil in pan. Add cumin seeds and asafoetida ka tadka add then ginger paste. Saute.
Lower flame. In a separate vessel, beat curd and add this mixture to tadka.
Add turmeric, Chili powder, Coriander powder and Garam masala powder. When masala starts sticking, add water and let it simmer.
Add fried fried ratalu into masala mixture. Add Salt. Cook for 4-5 minutes.
Simmer for another 4-5 minutes. Garnish with coriander leaves or preferably crushed dry pudina leaves.
