Instant Khaman Dhokla

Ingredients

For Khaman batter -
Besan (Chickpea flour/ Gram flour) - 1 Cup
Sooji (Semolina) - 1 and 1/2 Tablespoon
Sugar - 1 Tablespoon
Salt - to taste
Eno (fruit Salt) or Meetha Soda/baking soda - 1 and 1/2 Tablespoon
Citric acid (Nimbu ka satt) - 1/2 Tablespoon
Water - 1 Cup or less than that
For tempering -
Mustard/Rai - 1 Teaspoon
Sesame/Til - 1 Teaspoon
Curry leaves - 10 to 12
Sugar - 1 Teaspoon
Water - 1/2 Cup
Green Chilies - 4 to 5, slit and cut into long
Oil - 1 Tablespoon
Fresh Green Coriander - a handful finely chopped

Instructions

In a big bowl add besan, sooji, salt and sugar. Mix all well.
Add citric acid (nimbu ka satt) and mix. Add water and mix until well blended. You may need to add less water for pouring consistency batter.
Beat the dhokla batter couple of times to incorporate air into it. This is the main process that will result to a fluffy and light dhokla. This has to be done before you add eno/soda.
Rest for 5 to 10 minutes.
Add Eno/soda and whisk the batter until it is well blended. The batter will become airy and frothy. Add eno only when the steamer is ready and you are ready to steam. Else it will not give the fluffiness and sponge.
The batter should be of a thick dropping consistency.
Grease a pan mould. Pour batter into the greased pan and place it inside the dhokla steamer.
The batter should be filled half only leaving space as the batter will rise up while steaming.
Cover it and steam khaman for 7 to 8 minutes (or say 10 minutes). When Khaman is cooked it will rise up. To check if khaman is cooked properly, pierce a knife/skewer into it. It should come out clean.
When done, allow it to cool. Cut it into squares of the desired size.
Meanwhile, heat a pan with oil. Temper it with mustard, green chillies and curry leaves. When these splutter, add sesame seeds, sugar and salt.
Add a half cup of water and take 2 to 3 boils. Add some chopped coriander, keeping some aside. Off the flame.
Now, pour this mixture over the steamed khaman evenly and allow it to settle for 3 to 4 minutes.
Garnish with more fresh coriander. Optionally can add some grated fresh coriander also.
Yummy 'Instant Khaman Dhokla' is ready to be served. Enjoy it with Green Chutney or any other as per your taste and liking.
