Kachhe Aam Ki Chutney | Raw Mango Chutney is a sweet and tangy side dish. 

Kachhe Aam Ki Chutney | Raw Mango Chutney is a healthy and spicy summer special dish. It is easy to prepare in just a few minutes. You just need mango and jaggery powder with some spices. In addition, this nutritious chutney is great for digestion. It goes well with hot or cold paratha, roti, or bread. Moreover, it is a multipurpose chutney that can be used in many different ways.   • Sugar can be added instead of jaggery powder.
  • The ratio of jaggery powder to mango should be 1:2.

Ingredients

  • Raw mango / Kachha aam - 1
  • Water - As required
  • Oil - 1 tbsp
  • Cumin seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Onion seeds / Kalonji - 1/2 tsp
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Salt - As per taste
  • Jaggery powder / Gud - 1/2 Cup
  • Paratha / Roti - 2
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take mango and the required amount of water in a pressure cooker. Cook it till 3 to 4 whistles on medium flame.
  2. Once boiled well peel the mango and take out its pulp in a bowl using a spoon.
  3. Now transfer it to the grinding jar and grind it on pulse mode 2 to 3 times.
  4. Heat oil in a pan. Add asafoetida, cumin seeds, onion seeds, turmeric powder, and red chilli powder. Mix well.
  5. Then add the prepared mango pulp and mix well. Cook it for 1 to 2 minutes on medium flame. Stir it occasionally.
  6. Now add salt and jaggery powder. Mix well. Cook it for 2 to 3 minutes on medium flame till the jaggery melts and the chutney starts to boil.
  7. Once done, turn off the flame. Take paratha/roti spread the prepared chutney on it and roll it.
  8. 'Kachhe Aam Ki Chutney | Raw Mango Chutney' is ready to be served.
