Kadai Aloo | Dhaba Style Aloo Sabji is one of the most famous roadside dishes. It is a quick sabji to prepare as it does not require any elaborate preparations. This is a very simple sabji to prepare as this uses ingredients that are easily available at your home. It goes so well with roti, naan, poori, or paratha. It is an extremely delicious and soul-satisfying dish. The tanginess of tomato puree and curd, together make a wonderful texture and amazing taste. Ingredients

  • Oil - For frying
  • Potato / Aloo - 8 to 9 Small sized peeled
  • Ginger / Adrakh - 2 Inch Grated
  • Garlic / Lahsun - 4 to 5 cloves crushed
  • Green chilli / Hari mirch - 3 to 4 Slited
  • Curry leaves / Curry patta - A few
  • Cumin seeds / Jeera - 1 Teaspoon
  • Tomato / Tamatar - 2 to 3 chopped
  • Salt - As per taste
  • Red chili powder / Lal mirch powder - 1 to 2 Teaspoons
  • Turmeric powder / Haldi powder - 1 Teaspoon
  • Coriander powder / Dhaniya powder - 2 & 1/2 Teaspoons
  • Curd / Dahi - 1/4 Cup
  • Black pepper powder / Kali mirch powder - 1 Teaspoon
  • Homemade malai / Fresh cream - 1/4 Cup
  • Coriander leaves / Hara Dhaniya - A handful + For garnishing
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon

Instructions

  1. Take tomato in a grinding jar and grind them to prepare its puree.
  2. Boil potatoes in the pressure cooker till one whistle. Now remove its whistle. Strain all water and Peel them. Keep it aside.
  3. Meanwhile, heat oil in a pan. Fry parboiled potato on a medium flame for 10 to 12 minutes till they become light golden. Keep stirring occasionally.
  4. Now add ginger, garlic. Mix well. Then add green chilli. Mix well.
  5. Add curry leaves and cumin seeds. Mix well. Then add tomato puree. Mix well.
  6. Now add salt, red chilli powder, turmeric powder, and coriander powder. Mix well.
  7. Then add curd. Mix well. Add black pepper powder and malai. Mix well.
  8. Now add coriander leaves. Mix well. Then cover the pan with a lid and cook it for 2 minutes.
  9. Once done, turn off the flame. Add lemon juice. Mix well. Garnish it with coriander leaves and take it out to a serving bowl.
  10. 'Kadai Aloo | Dhaba Style Aloo Sabji' is ready to be served.
