Kaju Katli is one of the most delicious and popular sweets across India.

Kaju Katli is one of the most liked sweets in India. Prepared using cashew nut and sugar, it has a mild flavor of cardamom. It is very easy to prepare this sweet at home by following this simple recipe. This delicious dessert is loaded with the goodness of cashew nuts and has a very rich and melt- in- the- mouth texture. It is often made during festive occasions, such as Diwali.  It is better to make this lip-smacking sweet at home rather than buy it from the market. Homemade sweets taste much better, and so, because of the quality of ingredients used to prepare this sweet delicacy, you will surely enjoy it with your family and friends this festive season.

Tips and Suggestions by Mom Chef:-

  • Grind the cashew nuts in pulse mode for just a few seconds at a time to avoid the release of oil from the nuts.
  • While making sugar syrup, add just enough water to the sugar so that the sugar is immersed in the water. Do not add any more water thereafter.
  • Adding ghee/clarified butter to impart gloss to the sweet is completely optional. 
  • Let the mixture cool and then roll it. Cut it into pieces after it cools down completely.

Ingredients

  • Kaju/ cashew nuts - 1 cup
  • Sugar - 1/2 cup
  • Water - less than 1/4 cup
  • Cardamom powder - a pinch
  • Pistachios - few sliced
  • Ghee/ clarified butter - 1 teaspoon + for greasing

Instructions

  1. Grind the cashew nuts in batches. To prevent the release of oil, churn them a little at a time. (If the cashew nuts were stored in the refrigerator, then keep them outside for 15 to 20 minutes before using them).
  2. Sift the cashew nut powder to obtain a fine flour
  3. Repeat process 1 and 2 for the rest of cashew nut.
  4. Now, heat a non-stick kadai.
  5. Add sugar and less than 1/4 cup water. Dissolve the sugar on a medium flame.
  6. Cook the syrup to get one-string consistency.
  7. Add cashew nut powder to it. Mix and cook it on a low flame. Stir the mixture continuously.
  8. Add cardamom powder and ghee. Mix well. (Ghee will impart a sheen to the kaju katli)
  9. Once the mixture starts to thicken and leave the kadai, turn off the flame.
  10. Let the mixture cool for 5 to 10 minutes.
  11. Grease a butter paper or plastic sheet with ghee.
  12. Pour the mixture on greased butter paper and cover it with another greased butter paper.
  13. Roll it thick using a rolling pin. Sprinkle sliced pistachios on top and press the sprinkling lightly with hands.
  14. Cut the rolled mix into diamond- shaped pieces.
  15. Yummy 'Kaju Katli' is ready to be served.
  16. Note:- To avoid making the cashew powder oily and sticky, do not over grind the cashew nuts.
