Ingredients

  • For dry stuffing :-
  • Boiled potato - 1 Cup cut in cubes
  • Oil - 1 Tablespoon
  • Peanuts - 1/4 Cup
  • Salt - to taste
  • Sugar - as per taste
  • Turmeric powder - 1/4 Teaspoon
  • Dabeli masala - 1 Tablespoon
  • Lemon juice - 1 Teaspoon
  • For wet stuffing :-
  • Oil - 1 Tablespoon
  • Lemon juice - 1 Teaspoon
  • Dabeli masala - 1 Tablespoon
  • Turmeric powder - 1/4 Teaspoon
  • Red chilli / lal mirch powder - 1/2 Teaspoon
  • Sugar - as per taste
  • Salt - as per taste
  • Boiled mashed potato - 1/2 Cup
  • Water - as required
  • Butter - as required
  • Pav/buns - 4
  • For Garlic chutney :-
  • Garlic cloves - 1/4 Cup
  • Red Chilli powder - 2 Tablespoon
  • Salt - as per taste
  • Lemon juice - 1 Teaspoon
  • Chopped onions - 1/2 Cup for serving

Instructions

  1. For Roasted Peanuts: Take a kadai, add 1 tablespoon oil and heat it. Add peanuts and roast it. After roasting add salt, dabeli masala and some sugar. Mix well and keep aside
  2. For dry stuffing: In the same kadai, add mashed potato. Mix it. Add turmeric powder, salt, dabeli masala, sugar and lemon juice to it. Mix well all the ingredients. Set aside.
  3. For wet stuffing or Rassa: In a kadai, add 1 tablespoon of oil. Heat it. Add lemon juice to it and cover it with a lid. Add dabeli masala, mix well. Add 1/2 cup water.
  4. Add red chilli powder, turmeric powder. Mix well. Add salt and sugar. MIx well. Boil it. Add mashed potato. Cook it for 1 minute.
  5. For garlic chutney: Take a grinder jar and add garlic, red chilli powder, salt and lemon juice. Grind it to a smooth paste.
  6. Assembling: Take a pav/bun, make a cut in front. You have to make a pocket.
  7. Spread garlic chutney on both the part. Put dry stuffing. Then add wet stuffing or rassa. Put roasted peanuts and chopped onions. close it.
  8. Heat a pan, add some butter and toast the dabeli from both the sides on a medium flame.
  9. Yummy 'Kutch Famous Dabeli' is ready to be served.
