Lauki Palak Soup | Bottle Gourd Spinach Soup is packed with many health benefits. This soup is quick and very easy to prepare using easily available ingredients. This uses bottle gourd, potato, onion, cabbage, carrot and palak/spinach. These vegetables are very healthy and rich in many types of nutrients. This soup is amazing in taste and good for any season especially cold weather. You can serve it as an evening snack or a light dinner to your family.   • Add water for boiling the veggies as per your choice to make the soup of desired consistency.
  • Mustard powder enhances the flavour of the soup so do add it.
  • Do not overcook the carrot and spinach. Keep them crunchy.

Ingredients

  • Lauki/ Bottle Gourd - 200 Gram
  • Aloo/ Potato - 1/2
  • Pyaaz/ Onion - 1/2
  • Gobi/ Cabbage - 100 Gram
  • Palak/ Spinach - 1/2 Cup Chopped
  • Gajar/ Carrot - 1 sliced
  • Namak/ Salt - as per taste
  • Kali Mirch powder/ Black Pepper Powder - as per taste
  • Powdered Sarso/ Mustard seeds - 1 Teaspoon
  • Tel/ Oil - 1 Teaspoon

Instructions

  1. Wash and chop the bottle gourd (along with its peel), onion, potato and cabbage. Add a little water and pressure cook them for 3 to 4 whistles. Then let the veggies cool completely and grind them to make smooth puree and strain it.
  2. Now, heat oil in a pan.
  3. Add sliced carrot and sauté it on a medium flame. Keep the carrot crunchy.
  4. Then add chopped spinach and sauté for few seconds.
  5. Add the strained soup to the pan. Mix well. Let it boil. Add salt, black pepper powder, mustard powder. Mix well.
  6. Once soup is boiled, turn off the flame.
  7. Delicious 'Lauki Palak Soup | Bottle Gourd Spinach Soup' is ready to be served.
