Lauki Rabri – Healthy and Tasty!

The very famous Indian dessert “Rabri” is a popular steet food too. You can prepare this dessert in various flavors. Here we are presenting one such healthy but delicious alternative – the “Lauki Rabri”. It is sure to make you come back for more!

Ingredients

  • Grated lauki/bottle gourd (without seeds) - 200 grams
  • Milk - 1 litre
  • Sugar - 5 tablespoons
  • Cardamom powder - 1 teaspoon
  • Chopped Pistachios (for garnishing)
  • Green food color - 2-3 teaspoons

Instructions

  1. Take a heavy bottomed pan. Add the milk and let it boil.
  2. Add the grated lauki, sugar and cardamom powder.
  3. Simmer for around 1 hour. Keep stirring continuously while in between scraping the milk from sides of the pan.
  4. Take it off the flame when it becomes thick.
  5. Add the green food color and mix well.
  6. Cool and garnish with pistachios. Your Lauki Rabri is ready!
