Lemon Rice is a crunchy, flavorful, and delicious recipe.

Lemon Rice is one of the most popular and often made rice recipe from South India. It is tempered with spices like mustard seeds, curry leaves, and has peanuts for the crunch and lemon juice for that tangy flavor. This rice dish is one of the easiest to make with already cooked or steamed rice , where it is mixed with a spiced lemon and peanut mixture. The peanuts and cashew add crunch to this sour and aromatic rice recipe. Best is to serve lemon rice with a side vegetable salad or even coconut chutney. It’s a light dish and you can have it as a light breakfast also. This rice recipe is very popular in South India.  It’s pretty straight forward to make and makes a great quick lunch or meal. So try to prepare it and share your feedback.

  • You can use freshly made or leftover rice to it.
  • Adding cashew is optional, if you have, you can use it.

Ingredients

  • Ghee - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Urad dal/black gram - 1/2 teaspoon
  • Chana dal/split chickpeas - 1/2 teaspoon
  • Curry leaves - 5 to 6 leaves
  • Green chili - 1 finely chopped
  • Peanuts - 2 tablespoons
  • Cashew - 1 tablespoon (optional)
  • Turmeric powder - a pinch
  • Boiled rice - 1 bowl
  • Salt - as required
  • Lemon juice - 1 lemon
  • Coriander leaves - 1 teaspoon finely chopped

Instructions

  1. Heat ghee in a pan.
  2. Add mustard seeds, urad dal, chana dal, curry leaves, green chili, and peanuts. Saute it. Keep the flame medium.
  3. Add cashew. Roast peanuts and cashew properly. Saute it continuously.
  4. Add turmeric powder, salt, and boiled rice. Saute it.
  5. Add lemon juice and garnish with coriander leaves.
  6. Delicious Lemon Rice is ready to be served.
