Malai Kofta is a lip-smacking dish famous across India.

Malai Kofta is one of the richest Indian food dishes and also one of the yummiest. In any restaurant, whenever an Indian family goes for dinner and lunch, invariably the staple dish ordered is Malai Kofta…It is a creamy and rich dish that goes well with paratha or naan. This dish is a special one as this recipe was asked by my brother’s daughter in law…

So, try it today and you will know why? It is also one of my favorite Indian dishes as well…

Tips and Suggestions by Mom Chef:-

  • Make the kofta using homemade paneer.
  • You can avoid onion if you want. In that case, make the gravy using tomato.
  • Add kofta to the gravy just before serving it; else, the kofta will turn very soft.
  • You can serve this dish with Tava Tandoori Roti, Lachha Paratha

Ingredients

  • FOR KOFTA:-
  • Aloo/ Potato - 3 boiled
  • Paneer/ Cottage cheese - 1/2 Cup grated
  • Corn Flour - 2 Teaspoon
  • Laal Mirch powder/ Red Chilli powder - 1/2 Teaspoon
  • Dhaniya powder/ Coriander powder - 1/2 Teaspoon
  • Roasted Jeera powder/ Cumin powder - 1/4 Teaspoon
  • Garam Masala/ All spice mix - 1/4 Teaspoon
  • Namak/ Salt - as per taste
  • Tel/ Oil - as required for deep frying
  • FOR GRAVY:-
  • Pyaaz/ Onion - 2 roughly chopped
  • Tamatar/ Tomato - 2 roughly chopped
  • Adrak/ Ginger - 1/2 inch piece grated
  • Hari Mirch/ Green chilli - 2 chopped
  • Kaju/ Cashew Nut - 4 to 5
  • Kali mirch/ Black pepper corns - 3 to 4
  • Tej Patta/ Bay Leaf - 1
  • Elaichi/ Green Cardamom - 2
  • Dalchini/ Cinnamon - 1 small stick
  • Homemade cream/ Malai – 1 Tablespoon + for garnishing
  • Rai/ Mustard seeds - 1/2 Teaspoon
  • Haldi powder/ Turmeric powder - 1/4 Teaspoon
  • Laal mirch powder/ Red chilli powder - 1 Teaspoon
  • Dhaniya powder/ Coriander powder - 1 Tablespoon
  • Garam Masala/ All spice mix - 1/4 Teaspoon
  • Kasuri methi/ Dry fenugreek leaves - 1/2 Teaspoon
  • Namak/ Salt - as per taste

Instructions

  1. PREPARING KOFTA:
  2. Mash or grate the boiled potato. Add grated paneer to it.
  3. Add corn flour, salt, red chilli powder, coriander powder, roasted cumin powder, and garam masala. Mix well. Make small balls with the mixture.
  4. Meanwhile, heat oil for frying.
  5. Fry the balls on a medium flame until golden brown. Once fried, take them out and keep aside.
  6. PREPARING THE GRAVY:
  7. Heat 1 tablespoon oil in a pan.
  8. Add grated ginger, 1 chopped green chilli, black peppercorns, bay leaf, cardamom, and cinnamon stick. Sauté for a few seconds.
  9. Now, add chopped onions and sauté till it turns pinkish. Add cashew nuts, mix and cook.
  10. Then, add chopped tomato and cook until the tomato turns soft. Add salt and mix well. Cook for a minute and then turn off the flame. Let the mixture cool completely.
  11. Grind the cooked mixture to make a smooth puree. Add a little water if required for grinding.
  12. Now, heat ghee in a pan.
  13. Add mustard seeds, 1 chopped green chilli, red chilli powder, and coriander powder. Mix well.
  14. Then, add ground paste and a little water. Mix well and cook on a medium flame.
  15. Add water to adjust the consistency because the kofta will absorb the gravy. Cover and let it cook for 2 minutes. Do check the gravy in between.
  16. Once cooked, add homemade cream/malai, mix well, and cook.
  17. Crush the kasuri methi between the palms and add to the gravy. Add garam masala, a little salt, mix well, and cook for a minute.
  18. Add kofta to the gravy just before serving.
  19. Delicious 'Malai Kofta' is ready to be served. Garnish it with cream and chopped coriander leaves and serve hot.
