Ingredients

Paneer/Cottage Cheese - 200 gms
Boiled Potatoes/Aloo - 2
Corn Flour/Maida - 2 tablespoons
Chopped Tomatoes/Tamatar - 2
Cashews/Kaju (soaked) - handful
Magaj/Kharbooja ke beej/Muskmelon seeds- handful
Grated Coconut/Nariyal - 1 to 2 teaspoons
Onion/Pyaz - 1 small, chopped (optional)
Ginger/Adarak (chopped pieces) - 1
Green Chilies/Hari Mirch - 1 to 2
Coriander leaves chopped - for garnish
Milk/Doodh - 1/2 cup (optional)
Curd/Dahi - 1 tablespon
Cumin/Jeera - 1/4 teaspoon
Coriander/Dhaniya powder - 1/2 teaspoon
Red Chilli/Mirch Powder - 1 teaspoon
Turmeric/Haldi - 1/4 teaspoon
Salt/Namak - per taste
Garam Masala - 1 pinch
Bay leaf/Tej Patta - 1 Cinnamon/Dalchini - 1/2 inch long, Blck pepper corns/Kali Mirch - 2-3 Black Caramom/Elaichi - 1
Fresh Cream/Malai - 1/2 cup (if using)
Oil/Tel-1 tablespoons

Instructions

Take the boiled potatoes, mashed/grated paneer, corn flour, salt, garam masala powder and mix it well. Add finely chopped green chillies also to it.
Make small balls and deep fry in oil. Alternatively, use appe pan to shallow fry these balls with lesser oil. I used the appe pan to fry. When done, transfer these koftas to a plate.
Now, for the gravy, take soaked cashews, muskmelon seeds, chopped tomatoes, onion/garlic (if using) and grind them to a puree.
Take a pan and add a little oil and add cumins and whole garam masala (bay leaf, cinnamon stick, black pepper corn and black elaichi)to it. Stir fry for a minute.
Next, add the cashew tomato puree to it and stir fry. Cook for 4-5 minutes on low flame. Add a tablespoon of curd to it and cook for 2 minutes. Add salt, coriander, haldi and red chili powder to it. Now add grated coconut. Cook for 2-3 minutes more till the oil separates.
Add a cup of water/ milk to adjust gravy consistency and cook for 4-5 minutes more. At this stage, one can add the cream and cook for another 5 minutes. (I omitted to add cream)
Once thick, gravy is ready. Now add the kofta and close the lid.
Garnish the koftas with the coriander leaves, green chilies and one can also add a little cream for decoration.
Delicious malai kofta is ready to be served in your meals.
