Mexican Chaat is a delicious snack for all, especially for kids.

Mexican Chaat is a lip-smacking dish and is very healthy too. It is a fusion of Mexican and Indian cuisine which uses Nachos with kidney beans sauce. It is topped with lots of cheese to make the chaat. This taste sweet, sour with a little spiciness. It is a protein-rich dish and very nutritious appetizer. Moreover, this is very easy to prepare. This can be a good party snack or light dinner option for your family. Since it is crunchy and cheesy, kids will love to eat this snack. So, try to make this yummy snack at home and enjoy with your family.

This dish was prepared under the live cooking contest ‘Zayka World Cup’ by Dimple Lohith.

Tips and Suggestions by the Chef:-

  • It is important to soak the kidney beans for at least 8 hours. Pressure cook the kidney beans/rajma until it is mushy by adding little baking soda.
  • You can use tinned kidney beans too. OR follow this recipe if you forgot to soak the kidney beans – How to make Chole/Rajma without soaking overnight.
  • You can adjust the quantity of sauces according to your taste.

Ingredients

  • Rajma/Red Kidney Beans - 1 Cup
  • Nachos Chips - as required
  • Onion - 2 Teaspoon + for serving (finely chopped)
  • Green Capsicum - 2 Teaspoon + for serving (finely chopped)
  • Hot and Sour Sauce - 1 Tablespoon
  • Red Chilli Sauce - as per taste
  • Tomato Ketchup - 1 Teaspoon
  • Mexican Seasoning/Mixed Herbs - as per taste
  • Salt - as per taste
  • Baking Soda - a pinch
  • Grated Cheese - as required for serving

Instructions

  1. Wash and soak the Rajma/Kidney beans for at least 8 hours.
  2. Then pressure cook the kidney beans for 10 to 12 whistle by adding little salt and baking soda. Then let it cool.
  3. Open the lid and cook the kidney beans on a high flame. Mash it with a spoon.
  4. Add chopped onion, capsicum and cook.Then add Mexican seasoning, hot and sour sauce, red chilli sauce and tomato ketchup. Cook for couple of minutes. Add little salt to it and cook. Then Switch off the flame.
  5. Now, take a serving plate. Spread the nachos chips. Sprinkle Mexican Seasoning, then chopped onion and capsicum.
  6. Pour the cooked kidney beans mix on it.
  7. Garnish it with chopped onion, capsicum and grated cheese.
  8. Delicious 'Mexican Chaat' is ready to be served.
