Mexican Quesadilla | Leftover Roti Quesadilla is a delicious snack for all, especially kids. 

Mexican Quesadilla | Leftover Roti Quesadilla is a very healthy and lip-smacking snack. It is a version of cheese quesadilla which uses leftover roti. This cheesy snack has veggies like onion, tomato, tri-colour capsicum, sweet corn and paneer/cottage cheese. It is a simply taste out of the waste recipe. It can be an after school snack for kids or evening tea time snack for all. Apart from this, it gets ready quickly within minutes. It is a healthy and filling snack. You can make it as a light dinner too. So, try to make this at home and enjoy with your family.

Tips and Suggestions by Mom Chef:-

  • You can add veggies of your choice.
  • Add red chilli flakes and herbs according to your taste.
  • You can use either ghee/clarified butter, oil or butter for roasting the quesadilla.

Ingredients

  • Leftover Roti - 2
  • Tomato - 1 Cup finely chopped
  • Tricolour Capsicum - 1 Cup finely chopped
  • Sweet Corn - 1/2 Cup parboiled
  • Onion - 1 Cup finely chopped
  • Grated Cheese - 1 Cup
  • Paneer/Cottage Cheese - 1/2 Cup grated or crumbled
  • Mixed Herbs - as per taste
  • Red Chilli Flakes - as per taste
  • Salt - as per taste
  • Ghee/Clarified Butter - as required for roasting

Instructions

  1. Take a bowl ad add fiely chopped onion, tomato, tri colour capsicum, parboiled corn, crumbled paneer/cottage cheese, mixed herbs, red chilli flakes, salt, 2 tablespoon of grated cheese. Mix well.
  2. Take a roti and spread the mixture. Sprinkle mixed herbs and red chilli flakes. Spread some grated cheese then cover with other roti.
  3. Meanwhile, heat a tawa or pan. Grease it with ghee.
  4. Roast the quesadilla on a low flame. Apply ghee on another side too and roast it until crisp from both the sides. Then take it out and cut into 4 pieces.
  5. Delicious 'Mexican Quesadilla | Leftover Roti Quesadilla' is ready to e served.
