Mexican Rice Ring is a delicious rice preparation for all, especially kids.

Mexican Rice Ring is chilled and mouthwatering rice. This rice has flavours for tomato, onion, garlic, tricolour capsicum and it is served with a quick curd dip. A delicious snack, as well as dinner, gets ready in just 5 minutes and does not require any special preparation. You can serve it with some nachos to add crunch. This is very easy to prepare summer special recipe for kids. This flavourful rice is a complete one-pot meal in itself. This is a healthy and delicious rice preparation you should try once. So, try to make this at home and enjoy with your family.

Tips and Suggestions by Mom Chef:-

  • Adjust the quantity of the sauce and seasoning as per your taste.
  • You can add other veggies or boiled corn to make it more colourful and interesting.
  • If you do not have Tabasco sauce then you can use only chilli sauce too.

Ingredients

  • INGREDIENTS FOR MEXICAN RICE:-
  • Boiled rice - 1 Bowl
  • Puree of Tomato, Onion, Garlic - 1 Cup or as required
  • Green Capsicum - 2 Teaspoon
  • Yellow Capsicum - 2 Teaspoon
  • Red Capsicum - 2 Teaspoon
  • Onion - 2 Teaspoon
  • Spring Onion Greens - 2 Teaspoon
  • Chilli Sauce - as per taste
  • Tabasco sauce - as per taste
  • Mexican Seasoning/Taco Mix - as per taste
  • Mixed Herbs - as per taste
  • Salt - as per taste
  • INGREDIENTS FOR CURD DIP:-
  • Hung Currd - 1 Cup
  • Chopped Garlic - 1 Teaspoon
  • Chopped Jalapeno - as per taste
  • Spring Onion Greens - for garnishing
  • Salt - as per taste
  • Sugar - as per taste

Instructions

  1. PREPARING MEXICAN RICE:-
  2. Take a bowl and add boiled rice, tomato-onion-garlic puree, tricolour capsicum, onion, spring onion greens, chilli sauce, tabasco sauce, mixed herbs, mexican seasoning, salt. Mix all together.
  3. Take a jelly mould or Bundt cake pan. Add rice mix to it then press it with a spoon.
  4. Set it in the refrigerator for an hour or more.
  5. Once chilled and set, take it out. De-mould it on a plate.
  6. PREPARING CURD DIP:- Take a bowl, add hung curd, salt, sugar, chopped garlic, jalapeno. Mix well.
  7. Pour the dip in the center of rice ring. Garnish it with spring onion greens, nachos.
  8. Delicious and chilled 'Mexican Rice Ring' is ready to be served.
