Mix Veg Dry is a tasty and spicy dry curry. 

Mix Veg Dry is a curd-based curry. It is a simple dish with colorful mix vegetables and yogurt with other dry spices. You can serve it with roti or paratha for lunch or dinner. In addition, It has few ingredients but the flavors really shine through. when you have unexpected guests and different types of vegetables are available in less quantities, at that time you can prepare this mix veg dry sabji.   • Raw vegetables can be added instead of parboiled.

Ingredients

  • Oil - 1 Tablespoon
  • Dehusked black gram / Urad dal - 1 Teaspoon
  • Bengal gram / Chana dal - 1 Teaspoon
  • Mustard seeds / Rai - 1 Teaspoon
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Ginger / Adrakh - 1 Inch finely chopped
  • Green chilli / Hari mirch - 1 Finely chopped
  • Dry red chilli / Sukhi lal mirch - 2
  • Curry leaves / Curry patta - A few
  • Onion / Pyaaz - 1 Sliced
  • Capsicum - 1 Finely chopped
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Beans - 1/4 Cup finely chopped & parboiled
  • Carrot / Gajar - 1 Finely chopped & parboiled
  • Boiled potato / Aloo - 2 Diced
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 1 Teaspoon
  • Curd / Dahi - 1 Cup whisked

Instructions

  1. Heat oil in a pan. Add urad dal, bengal gram, mustard seeds, cumin seeds, ginger, green chilli, dry red chilli, and curry leaves. Mix well.
  2. Then add onion. Mix well. Saute it for 1 to 2 minutes on medium to high flame. Now add capsicum. Mix well.
  3. Add salt. Mix well. Then add turmeric powder, beans, and carrot. Mix well.
  4. Then add potato. Mix well. Saute it for 2 to 3 minutes. Now add coriander leaves. Mix well.
  5. Add all spice mix powder and dry fenugreek leaves by rubbing between your palm. Mix well.
  6. Now turn off the flame and add curd. Mix well. Once done, garnish it with coriander leaves and take it out to a serving bowl.
  7. 'Mix Veg Dry' is ready to be served.
