Mix Veg Paneer Sabzi is a colorful and nutritious side dish.

Mix Veg Paneer Sabzi is a healthy and tasty sabji for lunch or dinner. You can prepare it with easily available vegetables and some spices from your kitchen. In addition, it is made with lots of green vegetables like capsicum, green peas, french beans which turns this simple dish into a healthy dish. The addition of paneer in this dish makes it protein-rich. Moreover, it is a very tasty dish, with a soft and munching bite of paneer and veggies. Ingredients

  • Oil - 1 Tablespoon
  • Bay leaf / Tej patta - 1
  • Cardamom / Elaichi - 2
  • Cinnamon stick / Dalchini - 1
  • Mustard seeds / Rai - 1 Teaspoon
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Dry red chilli / Sukhi mirchi - 2
  • Curry leaves / Curry patta - A few
  • Onion / Pyaz - 1 Sliced
  • Ginger / Adrakh - 1 Inch crushed
  • Capsicum - 1 Diced
  • Salt - As per taste
  • Carrot / Gajar - 1/2 Cup diced
  • Green peas / Hare matar - 1/2 cup
  • French beans / Beans - 1/2 Cup chopped
  • Potato / Aloo - 2 Boiled and chopped
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Cottage cheese / Paneer cubes - 1 Cup
  • Dry fenugreek leaves / Kasuri methi - 1/2 Teaspoon
  • Dry mango powder / Aamchur powder - 1/2 Teaspoon
  • Coriander leaves / Hara dhaniya - A handful

Instructions

  1. Boil carrot, green peas, and beans in water for 7 to 8 minutes on high flame. Then strain the water from parboiled vegetables. Keep them aside.
  2. Heat oil in a pan. Add bay leaf, cardamom, cinnamon stick, mustard seeds, cumin seeds, asafoetida, dry red chilli, curry leaves, and onion. Mix well.
  3. Then add ginger. Mix well. Saute it for 2 to 3 minutes on medium flame. Keep all vegetables crunchy, don't overcook them.
  4. Now add capsicum and coriander leaves. Mix well. Then add salt, parboiled carrot, green peas, beans. Mix well.
  5. Then add potato. Mix well. Now add turmeric powder and all spice mix powder. Mix well.
  6. Now add paneer. Mix well. Add dry fenugreek leaves by rubbing between your palm. Mix well.
  7. Then add dry mango powder. Mix well. Garnish it with coriander leaves. Once done, take it out in a serving bowl.
  8. 'Mix Veg Paneer Sabzi' is ready to be served.
