Mix Veg Poha is a popular breakfast recipe in most of the regions of India.

Mix Veg Poha is a perfect balance of taste and nutrition. It tastes best when served with tea in the breakfast. It is also an excellent light yet stomach filling food item to pack in the lunch box. The addition of roasted peanuts along with the hint of lemon along with the roasted vegetables makes this dish simply delectable. The best part is, it is low in fat, high in health benefits. Ingredients

  • Peanuts - 1/2 cup
  • Oil - as required
  • Mustard seeds - as required
  • Green chili - 1 small-sized finely chopped
  • Onion - 1 small-sized finely chopped
  • Potato - 1 small-sized chopped
  • Salt - as required
  • Turmeric powder - as required
  • Water - as required
  • Poha/ flattened rice - 1 bowl
  • Capsicum (green, yellow red)- 2 tablespoons
  • Tomato - 1 small-sized finely chopped
  • Lemon juice - 1/2 lemon

Instructions

  1. Place the poha in a colander and rinse it well under running water. Stir the poha gently by using your fingers while rinsing, otherwise, they will become mushy at the time of cooking.
  2. Once washed properly add some salt, turmeric powder, mix it well, and keep it aside.
  3. Heat oil in a pan and add peanuts. Roast it on a low to medium flame until it becomes crispy and golden in color.
  4. Transfer it to a plate and keep it aside.
  5. Heat oil in the same pan, add the mustard seeds, allow it to crackle.
  6. Add green chili, onion, and saute it well.
  7. Further, add potato, salt, turmeric powder, and some water. Saute and cover it for a few seconds.
  8. Add capsicum and saute it.
  9. Add tomatoes, saute it, and cover it for a few seconds.
  10. Add poha and saute it gently so that it does not break. Cover it for a few seconds.
  11. Lastly, add peanuts and squeeze the lemon into it. Saute it gently and turn off the flame.
  12. Delicious Mix Veg Poha is ready to be served.
