Ingredients

  • FOR BOILING VERMICELLI :
  • Vermicelli / Sewaiyan - 1 Cup
  • Oil - 1/2 tsp
  • Water - 1 & 1/2 Cups
  • Salt - As per taste
  • FOR PREPARING MIX VEG VERMICELLI :
  • Oil - 2 tbsp
  • Bengal Gram / Chana dal - 1/2 tsp
  • Black gram / Urad dal - 1/2 tsp
  • Mustard Seeds / Rai - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Green Chilli / Hari Mirchi - 2 to 3 Slited
  • Curry Leaves / Curry Patta - A few chopped
  • Ginger / Adrak - 1 Inch grated
  • Beans - 1 Cup finely chopped
  • Carrot / Gajar - 1 Grated
  • Salt - As per taste
  • Coriander Leaves / Hara Dhaniya - A handful
  • Ground fresh coconut / Nariyal - 1/2 Cup (optional)
  • Roasted peanuts / Mungfali - 1/4 Cup coarsely ground
  • Lemon Juice / Nimbu Ka Ras - Of 1/2 Lemon
  • Clarified Butter / Ghee - 1 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR BOILING VERMICELLI :
  2. Boil water in a pan. Add oil, salt, and vermicelli. Mix well. Boil it for 3 to 4 minutes on a high flame. Stir it occasionally.
  3. Once the vermicelli is cooked well, turn off the flame and strain it. Keep it aside.
  4. FOR PREPARING MIX VEG VERMICELLI :
  5. Heat oil in a pan. Add urad dal, chana dal, mustard seeds, asafoetida, green chilli, curry leaves, and ginger. Mix well.
  6. Then add beans and mix well. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
  7. Now add carrot and mix well. Add salt and mix well. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
  8. Cover the pan with a lid and cook it for 1 to 2 minutes on medium flame. Stir it occasionally.
  9. Now add cooked vermicelli and mix well. Then add coriander leaves and fresh coconut. Mix well.
  10. Once done, turn off the flame. Add lemon juice and coarsely ground peanuts. Mix well. Then add ghee and mix well. Take it out in a serving plate.
  11. 'Mix Veg Sewaiyan | Mix Veg Vermicelli Upma' is ready to be served.
