In the below recipe ,I have explained steps to make muesli at home,so you don’t have to buy from store..Toasting and grinding the muesli makes the muffin smooth and gives a nutty flavour…..

Ingredients

  • 1) Ingredients for Muesli
  • Oats - 2 cup
  • Sesame seeds (Til) - 1 tablespoon
  • Flex seeds - 1 tablespoon
  • Chocolate & Vanilla Ragi bites - ½ cup
  • Corn flakes - ½ cup
  • Wheat flakes - ½ cup
  • Pumpkin seeds - 1 tablespoon
  • Sunflower seeds - 1 tablespoon
  • Almonds, Pistachio, walnuts - ½ cup
  • 2) Other ingredients
  • Honey - ¼ cup
  • Butter - 2 tablespoon
  • Olive oil - 1 tablespoon
  • Powdered sugar - ½ cup
  • Baking powder - 1 teaspoon
  • Eno fruit salt - 1 teaspoon
  • Dark cooking chocolate - ½ cup
  • Vanilla essence - 1 teaspoon
  • Cold milk - 1 ½ cup to 2 cups

Instructions

  1. Roast all the muesli ingredients in a pan for 8 to 10 minutes and coarsely grind it in a mixer
  2. In a mixing bowl add butter, sugar and whisk it for 5 minutes
  3. Add honey, olive oil &vanilla essence and whisk it again
  4. Add baking powder & Eno fruit salt and whisk it again and keep this muffin mixture aside.
  5. Microwave cooking chocolate till it melts
  6. Add muesli ingredients and chocolate to the muffin mixture & mix them well.
  7. Add milk as required to get the batter into an appropriate consistency
  8. Pre heat oven for 10 minutes at 180*. Arrange greased paper cups in baking tray and pour the batter into the cups
  9. Bake it in the oven for 25 to 30 minutes. To ensure muffins are ready ,try inserting a toothpick in the center of the muffin and make sure it comes out clean without any batter .
  10. Tasty muesli and chocolate muffins are ready...
