Office Lunch Box – Recipe No. 2 is a tempting and colourful meal for everyone. 

Office Lunch Box – Recipe No. 2 contains spicy tomato masala rice, lauki raita, papad churi and salad. This is quick and easy to prepare that required only 15 minutes of cooking. You can easily prepare this meal in the morning. You just need to cook the rice and chop the vegetables. This is a very healthy lunch box idea as this is full of nutrition. You can serve this meal to everyone and they will enjoy it. Moreover, this is a simple and hassle-free meal option using easily available ingredients. Tips and Suggestions by Mom Chef:-

  • Use a vessel to boil the rice and add ghee while boiling the rice to make it fluffy and non-sticky.
  • You can saute the paneer cubes before adding it to the rice. Use homemade paneer to make the rice.
  • To prevent the curd to turn sour, add little milk and sugar to the raita.

Ingredients

  • INGREDIENTS FOR SPICY TOMATO MASALA RICE:-
  • Cooked Rice - 1 Cup
  • Tomato - 3 chopped
  • Grated Paneer/Cottage Cheese - 1/2 Cup
  • Paneer/Cottage Cheese cubes - 1/4 Cup
  • Bay Leaf - 1
  • Dalchini/Cinnamin Stick - 1
  • Green Cardamom - 2
  • Black Peppercorns - 4 to 5
  • Green Chilli - 1 chopped
  • Ginger - 1/2 inch piece grated
  • Onion - 1 chopped
  • Salt - as per taste
  • Black salt - as per taste
  • Black pepper powder - 1/4 Teaspoon
  • Red Chilli Powder - as per taste
  • Garam Masala/All spice mix - 1/2 Teaspoon
  • Roasted Cumin powder - 1/4 Teaspoon
  • Coriander Powder - 1/2 Teaspoon
  • Coriander Leaves - as required
  • Oil - 1 Tablespoon
  • INGREDIENTS FOR LAUKI RAITA:-
  • Lauki/Bottle gourd - 1 Cup chopped and boiled
  • Curd - 250 ML
  • Salt - as per taste
  • Black salt - as per taste
  • Red Chilli Powder - 1/2 Teaspoon
  • Roasted Cumin seeds - 1/4 Teaspoon
  • Powdered Sugar - 1/2 Teaspoon
  • Coriander Leaves - as required
  • INGREDIENTS FOR PAPAD CHURI:-
  • Papad - 1 roasted
  • Namkeen Masala Boondi - 2 Tablespoon
  • Salt - as per taste
  • Red Chilli Powder - as per taste
  • INGREDIENTS FOR SALAD:-
  • Sliced Cucumber - as required
  • Sliced Carrot - as required
  • Sliced Tomato - as reuired
  • Sliced White Radish - as required

Instructions

  1. PREPARING SPICY TOMATO MASALA RICE:-
  2. Soak the rice for 15 minutes then boil in a vessel. Add some ghee and salt while boiling. Once the rice is cooked, keep aside. (you can soak the rice overnight as well)
  3. Heat oil in a pan. Then add bay leaf, cinnamon, green cardamom, black pepper corns.
  4. Add grated ginger, green chilli and chopped onion. Saute the onion until it turns pinkish.
  5. Once done, add chopped tomato. Mix well and cook.
  6. Add salt, black salt, black pepper powder, red chilli powder, garam masala, roasted cumin powder, coriander powder. Mix well and cook.
  7. When the tomato are slightly cooked, add 2 tablespoon water and grated paneer. Mix well. Cook for a minute then switch off the flame.
  8. Take a serving bowl and put the layer of cooked rice. Then make the layer of tomato masala. Again make the layers of cooked rice and tomato masala. Top it with paneer cubes and coriander leaves.
  9. Spicy tomato masala rice is ready.
  10. PREPARING LAUKI RAITA:-
  11. Take a bowl and add beaten curd, boiled and chopped lauki/bottle gourd, salt, black salt, red chilli powder, roasted cumin seeds, sugar. Mix well. Garnish the raita with coriander leaves.
  12. PREPARING PAPAD CHURI:-
  13. Roast the papad and let it cool. Crush it into small pieces. Add namkeen masala boondi, salt, red chilli powder. Mix well.
  14. SALAD:- Take a bowl and put the sliced cucumber, carrot, tomato, radish/mooli. You can give salt separately. Sprinkle salt over the salad just before serving.
  15. Delicious 'Office Lunch - Spicy Tomato Masala Rice, Lauki Raita, Papad Churi, Salad' is ready to be served.
