Office Lunch Box – Recipe No. 4 is a delicious and tempting meal for everyone. 

Office Lunch Box – Recipe No. 4 is quick and easy to prepare. This includes Jeera Rice, Dal Tadka, Boondi Cucumber Raita, Fruit chaat’ along with papad. This requires very simple easily available ingredients. You just need 15 minutes of cooking time. Moreover, this is a healthy and balanced meal for everyone. Dal rice is a favourite meal of everyone especially kids. So, they will love this meal. So, try to make this meal or office lunch and enjoy with your family. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • For the rice – If you want to open the pressure cooker immediately then cook the rice for 2 whistles on high flame.
  • Add ghee while cooking the dal, it gives a nice flavour to the dal. First, bring the dal to boil then close the lid. This prevents the spilling of water from pressure cooker.
  • Add salt and lemon juice to the fruit chaat just before serving it.

Ingredients

  • INGREDIENTS FOR JEERA RICE:-
  • Rice - 1/2 Cup
  • Water - 1/2 Cup
  • Oil - 1 Teaspoon
  • Cumin seeds/Jeera - 1 Teaspoon
  • Hing/Asafoetida - a pinch
  • Salt - as per taste
  • INGREDIENTS FOR DAL TADKA:-
  • Moong Dal/Moong Mogar/Yellow Gram/Green Gram Without Skin - 1/2 Cup
  • Turmeric powder - 1/2 Teaspoon
  • Salt - as per taste
  • Ghee/Clarified Butter - 1/2 Teaspoon + 2 Teaspoon
  • Onion - 1 chopped
  • Tomato - 1 chopped
  • Ginger - 1/2 inch piece grated
  • Green Chilli - 1 chopped
  • Hing/Asafoetida - a pinch
  • Garam Masala/All Spice mix - 1/4 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon
  • Coriander Leaves - for garnishing
  • INGREDIENTS FOR BOONDI CUCUMBER RAITA:-
  • Curd - 1/2 Cup
  • Cucumber - 1 to 2 Tablespoon chopped
  • Namkeen Boondi - 2 Tablespoon
  • Black Salt - as per taste
  • Salt - as per taste
  • Red Chilli Powder - a pinch
  • Roasted Cumin seeds - 1/4 Teaspoon
  • INGREDIENTS FOR FRUIT CHAAT:-
  • Guava/Peru/Jam - 1 sliced
  • Pomegranate Seeds - 1/2 Cup
  • Chaat Masala - as per taste
  • Salt - as per taste
  • Lemon - 1/2
  • Roasted Papad - 1 for serving

Instructions

  1. PREPARING JEERA RICE:- Wash and soak the rice for at least 15 minutes.
  2. Now, take a pressure cooker, add oil and heat it.
  3. Add asafoetida, cumin seeds. Let the seeds crackle. Then add soaked rice and saute it for a minute.
  4. Add 1/2 cup water (same as the quantity of rice) and salt. Mix well and close the lid. Pressure cook it for 1 whistle on a high flame. Then switch off the flame and let it cool completely before opening the lid.
  5. If you want to open the pressure cooker immediately then cook the rice for 2 whistles on high flame. Jeera Rice is ready to be served.
  6. PREPARING DAL TADKA:- Wash and soak the moong dal/yellow gram for at least 15 minutes.
  7. Now, heat the pressure cooker, add soaked dal, turmeric powder, salt, 1/2 teaspoon ghee and 1 & 1/2 cup water. Let it boil. Once boiled, close the lid and cook it on a high flame for 1 whistle. Then lower the flame and cook for 1 whistle. Then switch off the flame and let it cool.
  8. PREPARING TADKA:- Meanwhile, prepare the tadka. Heat 2 teaspoon ghee in a kadai or pan.
  9. Add asafoetida, cumin seeds, grated ginger and green chilli. Saute for few seconds.
  10. Then add chopped onion and saute it on a high flame until translucent.
  11. Add chopped tomato and cook it until tomato turns soft.
  12. Finally, add garam masala, red chilli powder, cooked dal and water as required to adjust the consistency. Mix well and let it boil. Once boiled switch off the flame. Garnish the dal with coriander leaves. Dal Tadka is ready.
  13. PREPARING BOONDI CUCUMBER RAITA:- Take a bowl and add beaten curd, chopped cucumber, namkeen boondi, black salt, salt, red chilli powder. Crush the roasted cumin seeds between the palm and add to the raita. Mix well. Boondi Cucumber Raita is ready.
  14. PREPARING FRUIT CHAAT:- Take a bowl and add sliced guava, pomegranate seeds, chaat masala. Add salt and lemon juice to the chaat just before serving.
  15. Delicious 'Office Lunch - Jeera Rice, Dal Tadka, Boondi Cucumber Raita, Fruit chaat' along with papad is ready to be served.
