Ingredients

  • Wheat flour - 3/4 cup
  • Maida - 1/4 cup
  • Powdered sugar - 1/4 cup
  • Eno fruit salt - 1 sachet
  • Baking powder - 1 teaspoon
  • Powdered flax seeds - 2 tablespoon
  • Buttermilk - 1/2 cup
  • Orange juice - 1 cup
  • Butter (softened) - 1 tablespoon
  • Almonds and walnut chopped - 1 tablespoon
  • Sugar - 1 teaspoon

Instructions

  1. In a large bowl add butter ,buttermilk and sugar. Beat it with a beater until everything gets mixed well.
  2. Sieve the flours, eno fruit salt and baking powder. Add the flour mixture , powdered flax seeds to wet mixture and beat with a beater for 1 minute.
  3. Add nuts and mix with spatula with cut and fold method. To this add 3/4 cup of orange juice little at once as required to form lumpy batter. Ensure that the batter is moist enough.
  4. Line paper cups in muffin tray and grease them with butter and pour the batter to the greased muffin moulds. Bake them in preheated oven at 180* degrees for 20 to 25 minutes.
  5. In a bowl, add sugar and remaining 1/4 cup orange juice and mix well.
  6. After ensuring that the muffins are well done, remove from the oven and drizzle the orange syrup on warm muffins.
  7. Orange nut muffins are ready to be severed.
