Here we have brought a twist to this fried puffed ball (puri) by making it in appe patra. Panipuri made in appe patra consume very less oil and can be easily made at home.

Ingredients

  • For Paani : Black salt - to taste, Mint leaves/Phudina - 1 cup
  • Jeera - 1/2 teaspoon
  • Chat masala - 1/2 teaspoon, Green chillies - 2
  • Ginger - small peice
  • Salt - to taste
  • For Filling : soaked and boiled moong - 1/2 cup
  • Soaked and boiled black channa - 1/2 cup
  • Boiled potato - 1 cubed
  • Chaat masala - 1 tablespoon
  • For Puri :
  • Sooji(rawa) - 1/2 cup
  • Maida - 1 tablespoon
  • Salt - to taste
  • Water - 1/4 cup
  • Oil - 1 tablespoon

Instructions

  1. Add all the ingredients of paani, mix it and crush it.
  2. Keep it aside in a bowl for 5 hours.
  3. Sieve the mixture and refrigerate.
  4. In a mixing bowl, add all ingredients for filling and mix it.
  5. Make a dough with sooji, maida, salt and add water as required to make hard dough.
  6. Cover the dough and set aside for 1/2 hour.
  7. Roll out small puris to fit in appe patra.
  8. Heat Appe patra. Add a drop of oil in all compartments. Arrange the puris in all compartments
  9. Roast it till golden brown on both side on slow flame. Panipuri in appe patra is ready to be served
