Peri Peri Pasta is an interesting colorful dish.

Peri Peri Pasta is a delightful change from the regular snacks. You just need a handful of ingredients like Weikfield pasta, cheese, vegetables, and some spices. This pasta is healthy and tasty as it contains folic acid and vitamin B12. Weikfield pasta is made with high quality durum wheat which is high in protein and a rich source of fibre. This pasta is rich in iron. Kids will get iron from this 1 bowl pasta similar to 2 bowl of spinach. In addition, it is easy to make and looks very nice in different colors.   • Mixed herbs can be added instead of oregano.
  • Add oil to the boiled pasta to make it non-sticky.
  • You can use boiled water of pasta when needed.
  • Keep the vegetables crunchy.

Ingredients

  • FOR BOILING THE PASTA :
  • Weikfield penne pasta - 1 Cup
  • Oil - 2 tsp
  • Salt - As per taste
  • Water - As required
  • FOR PREPARING PERI-PERI MASALA :
  • Kashmiri red chilli powder / Kashmiri lal michi powder - 3 tbsp
  • Garlic powder / Lahsun powder - 2 tsp
  • Black salt / Kala namak - 1 tsp
  • Powdered sugar - 1 tsp
  • Oregano - 1 tsp
  • Salt - 1/2 tsp
  • Ginger powder / Sonth powder - 1/4 tsp
  • Cinnamon powder / Dalchini powder - 1/4 tsp
  • FOR PREPARING SALSA :
  • Tomato / Tamatar - 2 Finely chopped
  • Onion / Pyaz - 2 Finely chopped
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • Green chilli / Hari mirchi - 2 to 3 Finely chopped
  • Cumin seeds powder / Jeera powder - 1/2 tsp
  • Kashmiri red chilli powder / Kashmiri lal michi powder - 1 tsp
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon
  • Salt - As per taste
  • FOR PREPARING PERI PERI PASTA :
  • Butter - 1 tbsp
  • Onion / pyaz - 1 Diced
  • Tricolor bell peppers / Capsicum - 1 Cup diced
  • Parboiled sweet corn - 1 Cup
  • Salt - As per taste
  • Oregano - 1 tsp
  • Tomato ketchup - 2 to 3 tbsp
  • Peri-peri masala - 1 & 1/2 tbsp
  • Grated cheese - 2 Cups + For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR BOILING THE PASTA :
  2. Boil water in a pan. Add salt, 1 tsp of oil, and pasta. Cook it on a medium to high flame for 7 to 8 minutes and then drain the water. Add 1 tsp of oil to the pasta and mix well. Keep it aside.
  3. Keep leftover boiled water of pasta in a bowl.
  4. FOR PREPARING PERI-PERI MASALA :
  5. Take kashmiri red chilli powder, garlic powder, black salt, powered sugar, oregano,salt, ginger powder, and cinnamon powder in a bowl. Mix well. Keep it aside.
  6. FOR PREPARING SALSA :
  7. Take tomato, onion, coriander leaves, green chilli, cumin seeds powder, kashmiri red chilli powder, lemon juice, and salt in a bowl. Mix well. Keep it aside.
  8. FOR PREPARING PERI PERI PASTA :
  9. Heat butter in a pan. Add onion, tricolor bell peppers, and parboiled sweet corn. Mix well and saute it for a few seconds on high flame.
  10. Then add salt and oregano. Mix well. Add tomato ketchup, prepared salsa, and peri-peri masala. Mix well.
  11. Add cheese and little leftover water of boiled pasta. Mix well. Saute it for 1 to 2 minutes on high flame. Keep stirring in between.
  12. Then add boiled pasta and mix well. Once done, take it out to a serving plate, Garnish it with cheese and coriander leaves.
  13. 'Peri Peri Pasta' is ready to be served.
