Poha Vegetable Idli is an instant and healthy dish.

Poha Vegetable Idli is soft, light, and fluffy idli. It is made with poha, sooji, some spice and vegetables. Moreover, it is not only healthy but also a good breakfast to start your day. You can also pack them in the tiffin box and they stay soft even later. In addition, it is an easy recipe as well as you can prepare in a short period of time also. There is no need of fermenting the batter, you can use the batter straightway after grinding. So, try to make this recipe in your kitchen and share your feedback with us.

Tips and Suggestions by a Mom Chef:

  • The ratio of poha and sooji should be 1:1.
  • Add water gradually while grinding poha and sooji.
  • Curd can be added instead of water while grinding.
  • Vegetables can be added as per choice and availability.
  • Baking soda can be added instead of fruit salt.
  • Add fruit salt just before steaming the idli.

Ingredients

  • Flattened rice / Poha - 1/2 Cup (soaked)
  • Water - As required
  • Semolina / Sooji - 1/2 Cup
  • Curd - 1 Cup whisked
  • Onion / Pyaaz - 1 Finely chopped
  • Capsicum - 1 Finely chopped
  • Carrot / Gajar - 1 Cup grated
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger-green chilli paste / Adrakh-Hari mirchi paste - 1/2 Teaspoon
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Salt - As per taste
  • Oil - As required
  • Asafoetida / Hing - A pinch
  • Mustard seeds / Rai - 1/2 Teaspoon
  • Black gram / Urad dal - 1/2Teaspoon
  • Bengal Gram / Chana dal - 1 Tablespoon
  • Curry leaves / Curry patta - A few
  • Fruit salt - 1 Teaspoon

Instructions

  1. Soak the poha in water for 10 minutes. Take soaked poha in mixture jar. Add semolina, and water. Gring it. Add water gradually while grinding.
  2. Prepare flowing consistency batter. Keep idli batter aside for 10 minutes.
  3. After 10 minutes add curd. Mix well. Add onion, capsicum, carrot, coriander leaves, ginger-green chilli paste, turmeric powder, and salt. Mix well.
  4. Heat 1 teaspoon oil in a tadka pan. Add asafoetida, mustard seeds, black gram, bengal gram, curry leaves. Mix well.
  5. Pour the prepared tadka on the idli batter. Mix well.
  6. Heat water in the idli steamer. Grease the idli mould with the oil.
  7. Add fruit salt in the batter. Mix well. Add fruit salt just before steaming the idli.
  8. Add batter in the mould. Place it in the idli steamer. Cook it for 15 minutes.
  9. After 15 minutes take out it. Let it cool down. Then remove it from mould. Take out it into a serving plate.
  10. 'Poha Vegetable Idli' is ready to be served.
