Ingredients

  • Chopped spinach : 2 cups
  • Chopped fenugreek (methi) leaves : 1 cup
  • Green Chilli : 1
  • Chopped Onion : 1
  • Paneer cut into small pieces : 100 grams
  • Oil : 1 tablespoon
  • Salt to taste
  • FOR POTATO LAYER:
  • Potatoes boiled and mashed - 3
  • Coriander chopped : 2 tablespoon
  • Green chilli paste : 1 teaspoon
  • Lemon juice : 1 teaspoon
  • Salt to taste
  • FOR WHITE SAUCE:
  • Maida : 2 tablespoon
  • Butter : 1 tablespoon
  • Milk : 1 1/2 cup
  • Salt to taste
  • Pepper powder : 1 teaspoon
  • Zatar spice : ½ teaspoon
  • Oregano : ½ teaspoon
  • Grated Cheese : 4 teaspoon

Instructions

  1. For potato layer mix all ingredients together and keep aside.
  2. Boil spinach and fenugreek (methi) leaves in water until they become soft. Drain the excess water and blend in a blender.
  3. Heat oil in a pan and fry the onions till it turns golden brown in colour. Add green chilli and saute for few seconds.
  4. Add the spinach and fenugreek paste, salt and paneer pieces
  5. FOR WHITE SAUCE: In a pan add butter and maida and saute it for few seconds. Add milk and keep stirring continuously so no lumps are formed
  6. Stir the white sauce till it becomes thick.
  7. Add salt ,pepper powder, zatar spice and oregano.
  8. Grease the baking tray. Spread a layer of potato evenly at the bottom of the baking dish.
  9. Spread the spinach mixture on top. Cover it with white sauce and top it with grated cheese.
  10. Bake it in hot oven at 200* for 20 minutes.
  11. Enjoy hot and tasty Potato Au Gratin with Spinach.
