Ingredients

FOR RABRI:
Milk - 1 liter
Fresh Paneer - Crumbled, 1 cup
1 cup sugar or can use Sugarfree
Cardamom - 6 to 7 powdered w/o skin
Saffron threads - 5 - 10 soaked in milk
FOR PARFAIT:
Apple - 1 small, chopped finely
Grapes - 1/2 cup, chopped finely
Pomengrate - 1/2 cup, handful
Strawberries - 2 to 3, chopped finely

Instructions

Boil Milk in a heavy bottom vessel. After a boil, simmer and Let the milk boil.
When a layer is formed in top, move it to the sides of the vessel and continue this process.
After some time when milk is reduced to half the original quantity, the color of milk turns creamish and texture gets thicker.
At this stage add crumbled fresh paneer and continue boiling. Keep stirring in between. Let paneer get cooked without forming lumps. Keep stirring such that the consistency of milk gets much thicker.
Now Add sugar/sugarfree and cook again. Mix well. (I omitted adding of sugar totally)
Add elaichi powder and the saffron threads soaked in milk along with the milk. Off the flame. Transfer the rabri to a bowl. Let it cool a bit.
For parfait-Take a serving shot glass.
Add chopped fruits layer, the rabri in layers.
I used first apples, rabri, pomengrate, rabri, grapes rabri, strawberries and garnished with rabri poori/malai and strawberries with little sugar crystals.
Serve chilled. Or as per taste.
