Rai Mirchi Achar | Stuffed Green Chilli Pickle is a spicy side-dish. The Indian meal becomes whole/complete with pickle as a side-dish. This is an easy and instant pickle recipe. You only have to follow some important tips, the pickle will come out perfect. It requires main spices like mustard seeds, fennel seeds, carom seeds, all spice mix powder for preparing it’s stuffing mixture. Tips and suggestions by the Mom Chef:-

  • Grind the mustard seeds to make a fine powder, while grinding add a pinch of salt.
  • For making the pickle more spicy, you can add red chili powder.
  • With the same process you can prepare red chili pickle.
  • For testing whether the oil is hot enough, add cumin seeds.
  • You can preserve this green chili pickle for 5 to 7 months.
  • Dip the green chili in oil, leaving a inch part of the chili above the oil.

Ingredients

  • Hari Mirchi/Green Chili - 5 to 7 no
  • Rai/Mustard seeds powder - 3 tablespoon
  • Saunf/fennel seeds - 3 tablespoon
  • Ajwain/Carom seeds - 1 teaspoon
  • Garam Masala/All spice mix powder - 1 teaspoon
  • Salt - as per taste
  • Haldi powder/Turmeric powder - 1/2 to 1 teaspoon
  • Lal Mirch powder/Red Chili powder - 1 pinch
  • Sarson ka Tel/Mustard Oil - 1/2 cup
  • Jeera/Cumin seeds - a pinch for oil hotness testing

Instructions

  1. Slit the green chili for opening, in order to fill the spices mixture. Remove the green chili seeds.
  2. In a plate, take mustard seeds powder, put fennel seeds, carom seeds, all spice mix powder, salt to taste, turmeric powder and red chili powder. Mix all the dry spices ingredients with the spoon.
  3. Heat the oil, test it by adding some cumin seeds. Allow the oil to cool down. Add 2 tablespoon of oil to the dry spices mixture. The spices mixture for filing the green chili is ready.
  4. Fill the spices mixture in the chillies. In a jar, place the chillies and pour the oil, above/leaving an inch of the green chili.
  5. Store the pickle in container and always keep in the shade/cool place in your kitchen.
  6. The Rai Mirchi Achar | Stuffed Green Chilli Pickle is ready to serve with puri.
