Rajma Tortilla is a healthy and delicious dish for all.

Rajma Tortilla is a lip-smacking meal and snack. The kidney beans cooked with paneer/cottage cheese and veggies then stuffed in the dough. This is crispy from outside. This is flavourful and a yummy meal for all especially, kids. It is a complete meal in itself. This dish is full of protein, fibre, calcium and vitamins. Ingredients

  • Ingredients for Tortilla:-
  • Maida/Refined flour - 3/4 Cup
  • Makki flour/Corn Meal - 1/4 Cup
  • Salt - to taste
  • Curd - 1/4 Cup
  • Chilli flakes - 1/2 Teaspoon
  • Oregano - 1/2 Teaspoon
  • Oil - 1 Tablespoon
  • Baking powder - 1/4 Teaspoon
  • Water - as required to prepare the dough
  • Ingredients for Stuffing-
  • Rajma/Kidney Beans - 1 Cup boiled
  • Paneer/Cottage Cheese - 1/2 Cup
  • Garlic - 1/2 Teaspoon
  • Onion - 1/2 Cup chopped
  • Capsicum - 1/2 Cup chopped
  • Tomato - 1/2 Cup chopped
  • Cheese - 1/4 Cup
  • Tomato ketchup - 2 Tablespoon
  • Chilli flakes - 1/2 Teaspoon
  • Oregano - 1/2 Teaspoon
  • Salt - to taste
  • Green coriander – a handful chopped
  • Butter - 1 Tablespoon
  • Oil - 1 Tablespoon

Instructions

  1. Preparing the dough:- In a bowl add flour, salt, oregano, chilli flakes, butter and mix it well. Add curd and mix well. With the help of water, prepare a dough and keep it aside.
  2. Preparing the stuffing:-
  3. Take a pan and add butter and oil.
  4. Now, add garlic and onion. Saute it until onion turn translucent.
  5. Add chopped tomato and cook it well until it turns soft.
  6. Add capsicum and boiled kidney beans. Mix and cook well on a medium flame. Add salt and mix well.
  7. Add chiili flakes, oregano . Mix well and cook. Add ketchup and cook it for another 3 to 4 minutes.
  8. Add grated paneer and mix well
  9. Now, add coriander leaves and transfer the mixture into a bowl.
  10. Preparing Tortilla:-
  11. Make 2 chapatis from the dough. Take one chapati, spread cheese and add the mixture to it. Cover it with the other chapati. Cover all the edges properly so that filling cannot come out.
  12. Heat some oil on the pan and cook the tortilla on a medium flame.
  13. Cook it until it gets crispy from both sides. When it is ready, transfer to a plate.
  14. Yummy ‘Rajma Tortilla’ is ready to be served with tomato ketchup.
