Raw Mango Curd Rice is a summer special dish. 

Raw Mango Curd Rice is a quick and easy lunch or dinner option. It is sour and spicy. It is made with raw mango, cooked rice, peanuts, curd, carrot, and some spices. This is easy to make and tasty as well as healthy. It is served by itself without any side dish but also tastes great with dal. In addition, You can prepare it for any type of party or get-together menu.  So try to make this dish in your kitchen and share your feedback with us.

Ingredients

  • Cooked Rice / Pake Hue Chawal - 2 Cups
  • Curd / Dahi - 1 Cup whisked
  • Carrot / Gajar - 1 Cup grated
  • Raw Mango / Kachcha Aam - 1 Cup grated + For garnishing
  • Roasted Peanuts / Mungfali - 1/4 Cup
  • Oil - 2 tbsp
  • Mustard Seeds / Rai - 1 tsp
  • Black Gram / Urad Dal - 1/2 tsp
  • Bengal Gram / Chana Dal - 1/2 tsp
  • Dry Red Chilli / Sukhi Lal Mirch - 2
  • Curry leaves / Curry patta - A few
  • Green Chilli / Hari Mirchi - 1 Slited
  • Cashews / Kaju - 8 to 10 Halves
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • Salt - As per taste
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take cooked rice in a mixing bowl. Add curd, carrot, raw mango, and roasted peanuts.
  2. Heat oil in a pan. Add mustard seeds, urad dal, chana dal, dry red chilli, curry leaves, and green chilli. Saute it for 1 to 2 minutes on medium flame. Keep stirring continuously.
  3. Once done, turn off the flame and add cashews and mix well. Add the prepared tadka to the cooked rice bowl. Add coriander leaves and salt. Mix well.
  4. Once done, garnish it with raw mango and coriander leaves.
  5. 'Raw Mango Curd Rice' is ready to be served.
