Sabudana Khichdi

Ingredients

Sabudana/Sago pearls - 1 Cup soaked
Potato - 1 big peeled and finely chopped
Tomato - 1 big chopped (if you eat while fasting)
Green Chillies - 1 to 2 finely chopped
Green coriander/Mint - for garnish
Rock Salt/Sendha Namak - 1 Teaspoon
Garam masala/All spice mix - 1/2 Teaspoon
Ghee/clarified butter or Oil - 1 Tablespoon
Cumin/Jeera - 1/2 Teaspoon
Peanuts/Shenga/Mungfali - 1/4 Cup crushed coarsely
Lemon juice - juice of 1/2 lemon

Instructions

Wash, strain and soak sabudana/sago pearls for an hour or 2.
Heat Ghee/Oil. Add jeera tadka. Add chopped green chillies and saute. Next, add chopped potatoes and saute and cook till they turn tender.
Add chopped tomatoes (optionally you can omit this if you don't eat tomatoes while fasting). Since we eat tomatoes while fasting, I added them.
You may add grated ginger also at this stage.
Now add the soaked Sago/Sabudana pearls to this.
Add coarsely crushed peanuts, rock salt and garam masala to it, mix well and cook for 3 to 4 minutes such that the sago pearls looks translucent and cooked.
Squeeze some lemon juice (half a lemon) and mix well.
Garnish with fresh green coriander or mint leaves.
Yummy 'Sabudana Khichdi' is ready to be served. Serve hot.
