Sabudana Vada | Sago Fritters is a delicious deep-fried snack for all.

Sabudana Vada | Sago Fritters or sabakki vada is a crispy Maharashtrian fasting snack.  This delicious vrat recipe requires sago/sabudana, peanuts, boiled potato, green chilli and rock salt. This deep-fried snack is crunchy from outside and soft from inside. This can be eaten during fast or either any day. Everyone loves to eat this mouthwatering snack including kids. This is also known as sago vada, sagubiyyam vadalu, javvarisi vadai in different parts of the country. Furthermore, it is very easy to prepare with fewer ingredients which are easily available at home. So, try to make this at home and let us know how you liked it.

Tips and Suggestions by Mom Chef:-

  • If you are making this vada for fast then avoid adding ajwain/carom seeds and use rock salt/sendha namak.
  • The mixture of the vada should be like a dough else it will break while frying. Add one boiled potato more if it breaks.
  • If the mixture seems very moist then add more roasted peanuts powder. Peanuts absorb excess moisture.
  • First, heat oil on a high flame. Once the oil is hot then only fry the vada on a medium flame.

Ingredients

  • Sago/Sabudana - 1 Cup
  • Boiled Potato - 2
  • Green Chilli - 2
  • Peanuts - 1/2 Cup
  • Coriander leaves - a handful chopped
  • Ajwain/Carom seeds - 1/2 Teaspoon
  • Rock salt/Sendha Namak - as per taste
  • Oil - as required for frying

Instructions

  1. Wash and soak sabudana overnight.
  2. Mash the boiled potatoes. It should be without any lumps.
  3. Grind green chilli and coriander leaves together. Also, grind the roasted peanuts to make a fine powder.
  4. Add ground peanuts, green chilli-coriander leaves paste, soaked sabudana to the mashed potato.
  5. Add salt and ajwain. Mix all together to make a dough like mixture.
  6. Meanwhile, heat oil for frying.
  7. Take a chapati sized mixture. Roll it then flattened it to make vada.
  8. Once the oil is hot, fry the vada on a medium flame. When they turn nice golden brown from both the sides, take them out.
  9. Yummy 'Sabudana Vada' is ready to be served.
