Here’s, a recipe with proven tips for making a crispy and lip-smacking samosa, in an air-fryer. For diet followers, this is a wonderful option for guilt-free snacking. Tips and Suggestions by the Chef:-

  • In place of all purpose flour, you can use whole wheat flour.
  • While cooking the potato mixture for samosa, ensure that there is no water, otherwise the samosa will not becomes crispy.
  • Always cool the potato mixture, before making the samosa.
  • If the dough for samosa becomes too tight or too soft, the samosa will become soggy.
  • While air frying, grease the samosa with oil at the time interval of 10 minutes for making it shiny.
  • You can use the red chili powder available with you.
  • Apply oil to the rolling pin, so that the roti dose not stick.

Ingredients

  • FOR PREPARAING THE DOUGH:
  • All purpose flour/Maida - 1 to 2 cups
  • Salt - to taste
  • Carom seeds/Ajwain - 1 teaspoon
  • Oil - as required
  • Water - as required
  • FOR PREPARING THE STUFFING:
  • Oil - 1 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Whole coriander seeds/Dhania dane - 1 to 2 teaspoon
  • Asafoetida powder/Hing powder - a pinch
  • Ginger/Adrak - 1 teaspoon grated
  • Green chili/Hari mirch - 1 no finely chopped
  • Potato/Aloo - 4 to 5 medium size (boiled)
  • Kashmiri red chili powder/Lal mirch powder - 1 to 2 teaspoon
  • Turmeric powder/Haldi powder - 1 teaspoon
  • Roasted cumin seeds/Jeera powder - 1 teaspoon
  • Coriander seeds powder/Dhania powder - 2 teaspoon
  • All spice mix powder/Garam masala - 1 teaspoon
  • Coriander leaves - to garnish
  • FOR PREPARING THE SAMOSA:
  • All purpose flour/Maida dough - for making the covering and filling
  • Potato/Aloo mixture - as required for filling
  • Oil - for greasing

Instructions

  1. FOR PREPARAING THE DOUGH:
  2. In a bowl, take the all purpose flour, then add salt to taste. Rub the carom seeds between the palms and add. Put about 3 to 4 tablespoon of oil. Mix with hands.
  3. Or add the oil as required, and mix with hands, such that the dough binds between the palms, forming like a fistful of dough.
  4. Take water as required and knead the dough, so that it is of consistency of making a puri.
  5. FOR PREPARING THE STUFFING:
  6. Heat 1 tablespoon of oil, put cumin seeds, whole coriander seeds, asafoetida powder, grated ginger, and chopped green chili. Saute well.
  7. Then, put the boiled and mashed potato. Put the kashmiri red chili powder, turmeric powder, roasted cumin seeds powder, coriander seeds powder and all spice mix powder. Mix well and cook for 4 to 5 minutes.
  8. Then, add the salt to taste and garnish with coriander leaves. Allow the mixture to cool down.
  9. FOR PREPARING THE SAMOSA:
  10. Preheat the air fryer at 180 degrees for 5 minutes. Take a small portion of the dough, apply oil to the rolling pin and roll to make a roti. Roll the sides also.
  11. Cut the roti in between into two halves. Take one half portion on the palm. Wet the index finger with water. Apply water on one edge of the roti, fold and apply water on the outer edge.
  12. Fold together in triangle shape, making a cone. Fill about 75 percent of the cone formed with potato mixture. Apply water on the edges and close to form the samosa.
  13. Grease the samosa with oil. Also, grease the grill with oil. Place the samosa in the air fryer, set the temperature at 180 degrees and air fry for 20 to 25 minutes.
  14. The Samosa - Without frying is ready to be served.
