Ingredients

  • Oil - 2 tbsp
  • Cumin Seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Bay Leaf / Tej Patta - 1
  • Cardamom / Elaichi - 2
  • Black Peppercorns / Kali Mirch - 3 to 4
  • Green Chilli / Hari Mirchi - 1 Slit
  • Cloves / Laung - 2
  • Curry Leaves / Curry Patta - A few
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Tomato / Tamatar - 1 Chopped
  • Parboiled Sweet Corn - 1 Cup + 2 tbsp
  • Cashews / Kaju - 5 to 7
  • Ginger / Adrak - 1 Inch grated
  • Water - As required
  • Red Chilli Powder / Lal Mirchi Powder - 1 tsp
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Salt - As per taste
  • Capsicum / Shimla Mirch - 1 Finely chopped (optional)
  • Homemade Malai - 1/4 Cup
  • Dry Fenugreek Leaves / Kasuri Methi - 1 tsp
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • All Spice Mix Powder / Garam Masala - 1 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take tomato, 2 tbsp of sweet corn, ginger, cashews, and little water in the grinding jar. Grind it for a few seconds to prepare its puree. Keep it aside.
  2. Heat oil in a pan. Add cumin seeds, asafoetida, bay leaf, cardamom, green chilli, black peppercorns, cloves, curry leaves. Mix well.
  3. Add turmeric powder and the prepared puree. Mix well. Saute it for 2 to 3 minutes on medium flame. Keep stirring occasionally in between.
  4. Then add red chilli powder, coriander powder, and salt. Mix well.
  5. Add a little water and mix well. Saute it for 1 to 2 minutes on medium flame until the oil separates. Keep stirring occasionally.
  6. Now add capsicum and mix well. Saute it for 2 to 3 minutes on medium flame. Keep stirring occasionally in between.
  7. Add 1 Cup of sweet corn, homemade malai, dry fenugreek leaves by rubbing between your palms, and all spice mix powder. Mix well.
  8. Once done, turn off the flame and garnish it with coriander leaves. Take it out to a serving bowl.
  9. 'Shahi Corn Malai Curry Without Onion Garlic' is ready to be served.
