Shahi Stuffed Gatte is a spicy, tasty, and flavorsome curry which is very famous in the state of Rajasthan.

Shahi Stuffed Gatte is a gram flour roll stuffed with paneer/cottage cheese, cashew, raisins, spices and served with curd based gravy. This recipe is a very royal dish of Rajasthan, which was often served in royal meals and is a delicious curry that can be made for any special occasion. This yummy and rich curry is generally served in a Rajasthani special thali. This recipe takes much time, but when you will have it with your family and friends, it will be all worth it. You can serve it with plain rice or roti or poori or paratha. So, try this recipe and let us know your feedback.

Ingredients

  • Gram flour/ besan -1 Cup
  • Chopped onion - 1 Cup
  • Paneer - 1 Cup
  • Coriander leaves - hand full
  • Ginger-garlic paste - 1 Teaspoon
  • Turmeric/ haldi powder - 1/2 Teaspoon
  • Fresh curd - 1 Cup
  • Green chilli - 1, finely chopped
  • Cumin seeds/ jeera - 1/2 Teaspoon
  • Asafoetida/ hing - a pinch
  • Salt/ namak - 1 Teaspoon or as per taste
  • Red chilli/ lal mirch powder - 1/2 Teaspoon
  • Fennel seed/Sounf - 1/2 Teaspoon
  • Coriander powder - 1 Tablespoon
  • Raisins - 1 Tablespoon
  • Chopped cashews - 1 Tablespoon
  • Kasuri methi/Dried fenugreek leaves - 1/2 Teaspoon (dry roasted)

Instructions

  1. Make a dough of a medium consistency by adding gram flour, water (as required) and half of the salt and spices. This dough will be used for preparing gatte.
  2. STUFFING - Add chopped paneer, cashews, salt, red chilli powder, kasuri methi. Mix well these ingredients and the stuffing for gatte is ready. Set it aside.
  3. Take a portion of the dough and place it on a plain plastic. Roll it into a circle with the help of a rolling pin.
  4. Stuff by placing the stuffing in the middle. Make a tight roll of it. Meanwhile, boil enough water in a pan. Place the stuffed roti rolls into boiled water and cook them for 10-12 minutes on a medium flame.
  5. Boil the chopped onions and make a smooth paste of it. Set aside.
  6. Heat a pan on a medium flame and add asafoetida, cumin seeds, ginger-garlic paste and boiled onion paste continuously. Saute for next 5 minutes.
  7. Now add half of the spices to it and mix well. Saute for another 2 minutes. Add curd and half a cup of water. Stir continuously.
  8. Wait for a boil and then put off the gas. Garnish the curry with fresh coriander leaves and dry kasuri methi.
  9. SERVING - Place the stuffed gatte rolls on a plate and then pour the gravy over it. Garnish with freshly chopped coriander leaves.
  10. Rich and flavoursome curry 'Shahi Stuffed Gatte' is ready to be served.
