Stuffed Idlies – Delicious Breakfast

Idli is a healthy soul satisfying South Indian dish that can be had any time of the day. Here is a new innovative style of making stuffed idlis.  Though one can use any stuffing, here I have used healthier veggie stuffing.

You can have this with Coconut Chutney and Vegetable Sambhar – a perfect meal combo!

Ingredients

  • Idli batter - 3 cups
  • FOR STUFFING: Grated veggies like carrot, cabbage, cauliflower, capsicum - 1/2 cup
  • Mashed Boiled Potato - 2
  • Peas - handful (optional)
  • Chopped green chilies - 1
  • Green coriander leaves - finely chopped handful
  • Red chili powder - 1/2 teaspoon
  • Salt as per taste
  • Amchur/Dry Mango Powder - 1/2 teaspoon
  • Turmeric/Haldi powder - 1/4 teaspoon
  • Sambhar Masala - 1/4 teaspoon
  • Heeng/Asafoetida - 2 pinch
  • Oil for tadka - 1 teaspoon
  • Mustard, urad dal for tadka - 1/4 teaspoon each
  • Curry leaves, dry red chilies - 2 sprig/piece each

Instructions

  1. Heat oil for tadka and add asafoetida, mustard, urad dal, dry red chilies and curry patta.
  2. Add green chilies and saute. Add peas, grated veggies and mashed boiled potatoes. Stir fry and add salt and turmeric powder. Mix well.
  3. Cook for 3-4 minutes. Add red chilli powder, sambhar masala and dry mango powder and mix well. Add chopped coriander leaves. Turn off the flame and let this veggie masala cool down.
  4. Grease Idli moulds and add little batter to fill half of the mould.
  5. Take a spoonful of veggie masala made earlier, make a ball and place in center of the batter poured in the mould.
  6. Pour little idli batter again on top of this masala so as to cover and fill the mould completely.
  7. Steam cook them as you normally do for Idlies. After 5-7 minutes your stuffed Idlies are ready.
  8. Serve Stuffed Idlis hot with coconut chutney or green chutney or tomato chutney or sambhar as per your choice.
