Ingredients

  • Oil - 1 Tablespoon
  • Mustard seeds / Rai - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Green chilli / Hari mirchi - 1 Slited
  • Onion / Pyaz - 1 Sliced
  • Magic masala - 1 Teaspoon
  • Turmeric powder / Haldi - 1/2 Teaspoon
  • Coriander seeds powder / Dhaniya powder - 1 Teaspoon
  • Cumin seeds powder / Jeera powder - 1 Teaspoon
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Boiled potato / Aloo - 4 to 5 diced
  • Salt - As per taste
  • Coriander leaves / Hara dhaniya - A handful
  • Lemon juice - Of 1/2 lemon
  • FOR MAGIC MASALA :
  • Garlic / Lahsun - 6 to 7 Cloves
  • Cumin seeds / Jeera - 1 Teaspoon
  • Kashmiri red chilli powder / Kashmiri lal mirch powder - 1 Teaspoon
  • Salt - 1 Tablespoon

Instructions

  1. FOR PREPARING MAGIC MASALA :
  2. Crush garlic cloves, cumin seeds, kashmiri red chilli powder, and salt using a mortar and pestle. Crush it for 3 to 4 minutes till it becomes a nice masala paste. Keep it aside.
  3. FOR PREPARING SABZI :
  4. Heat oil in a pan. Add mustard seeds, asafoetida, green chilli, and onion. Mix well.
  5. Saute it on a medium flame for 2 to 3 minutes. Then add the magic masala. Mix well.
  6. Now add turmeric powder, coriander seeds powder, cumin seeds powder, and all spice mix powder. Mix well.
  7. Then add potato. Mix well. Add little salt. Mix well. Add coriander leaves. Mix well. Turn off the flame. Then add lemon juice. Mix well.
  8. Once done. Take it out in a serving bowl.
  9. 'Sukhi Aloo Sabji | Dry Potato Sabzi' is ready to be served.
