Schezwan Fried Rice is a popular Indo Chinese dish made by stir-frying the rice with choice of vegetable and schezwan chutney. It is an extension to the fried rice recipe which does not have an extra ingredient like schezwan chutney. If you crave for something spicy for lunch or dinner, then this fried rice recipe is really a very good option. It’s easy to prepare if you have Schezwan chutney ready with you. The smoky flavor that you get in the dish is achieved by stir-frying at very high heat. It is so delicious and yum, that you can’t stop eating it. Ingredients

  • Oil - 1 tablespoon
  • Mustard Seeds - 1 teaspoon
  • Green chili - 1 small-sized finely chopped
  • Onion - 1 small-sized finely chopped
  • Green capsicum - 2 tablespoons finely chopped
  • Yellow capsicum - 2 tablespoons finely chopped
  • Carrot - 1 small-sized grated
  • Salt - as required
  • Schzewan chutney/sauce - 2 teaspoons
  • Mint leaves - 5 to 6 finely chopped
  • Boiled rice - 1 bowl
  • Coriander leaves - a fistful finely chopped

Instructions

  1. Heat oil in a pan.
  2. Add mustard seeds, green chili, onion, and saute it well.
  3. Further, add green and yellow colored capsicum, carrot, and saute it. Keep the flame high for a smoky flavor.
  4. Add salt, schzewan chutney, mint leaves, boiled rice, and saute it well.
  5. Garnish it with coriander leaves and turn off the flame.
  6. Delicious Schezwan Fried Rice is ready to be served.
