Veg Fried Rice is a healthy and perfect option of kid’s tiffin. This gets cooked quickly if you have cooked rice and chopped veggies ready. This is not only tasty but healthy too. This requires lots of veggies like carrot, onion, french beans, capsicum, cabbage. This is a nutritious lunch box ideas for kids. They will enjoy eating their tiffin. This is a good option for busy mornings. Every mom wants their kid’s tiffin should be healthy and tasty. So, here is a simple recipe to make for lunch box. Tips and Suggestions by Mom Chef:-

  • You can use veggies as per the availability and choice.
  • You can pre-prepare for the dish at night. Cook the rice at night and chop the veggies too. Keep them in the refrigerator. In the morning you have to just saute the veggies and the tiffin gets ready within minutes.
  • If you want to make the rice in the morning then soak the rice previous night. The rice gets cooked faster when soaked.
  • Saute the veggies on a high flame. Do not overcook them, keep them crunchy.

Ingredients

  • Cooked Basmati Rice - 1 Cup
  • Onion - 1 Cup finely chopped
  • French beans - 1/2 Cup finely chopped
  • Carrot - 1/2 Cup finely chopped
  • Capsicum - 1/2 Cup finely chopped
  • Cabbage - 1/2 Cup finely chopped
  • Paneer/Cottage Cheese - 1/4 Cup finely chopped
  • Garlic - 4 to 5 finely chopped
  • Salt - as per taste
  • Vinegar - 1/2 Teaspoon
  • Soy Sauce - 1/2 Teaspoon
  • Ghee/Clarified Butter - 1 Teaspoon
  • Coriander leaves - as required for garnishing

Instructions

  1. Heat ghee in a kadai.
  2. Add garlic and saute it for few seconds. Then add onion and saute it on a high flame for a couple of minutes.
  3. Then add finely chopped french beans, carrot, capsicum and shredded cabbage. Saute the veggies on a high flame for a minute. Keep the vegetables crunchy. Add salt to it and saute.
  4. Then add vinegar and soy sauce. Mix well and saute.
  5. Add cooked rice to it. Toss it well. Cook for a minute then switch off the gas. Garnish it with chopped coriander leaves.
  6. Delicious 'Veg Fried Rice' is ready to be served.
