Ingredients

  • Beetroot cubes - 1/2 Cup
  • Tomatoes - 2 large
  • Garlic Cloves (chopped) - 3-4
  • Cumin seeds - 1/2 Teaspoon
  • Ghee/Clarified butter - 1/2 Teaspoon
  • Salt - to taste
  • Black pepper powder - 1/2 Teaspoon
  • Grated carrot - 1/2 Cup
  • Chopped onion - 1/2 Cup
  • Water - 2 Cup
  • Coriander leaves (for garnishing)

Instructions

  1. In a pan, add ghee, cumin seeds.
  2. Add garlic and saute. Add onions and cook for around 2-3 minutes.
  3. Add beetroot, carrot and saute.
  4. Add salt and cook for around 3-4 minutes.
  5. Transfer the contents to pressure cooker. Add tomatoes and water. Cook for 3 whistles. Allow it to cool. Blend it with a blender.
  6. Sieve the contents and transfer it to a pan. Add black pepper powder and boil the soup. Switch off the flame.
  7. Delicious 'Tomato Beetroot Soup' is ready to be served. Garnish with coriander leaves and serve hot.
