Ingredients

  • FOR SAUTEED PANEER :
  • Clarified butter / Ghee - 3 to 4 tbsp
  • Cottage cheese / Paneer - 1 Cup diced
  • FOR PREPARING TOMATO PANEER RICE :
  • Oil - 1 tbsp
  • Cumin seeds / Jeera - 1 tsp
  • Mustard seeds / Rai - 1/2 tsp
  • Black gram / Urad dal - 1 tsp
  • Bengal gram / Chana dal - 1 tsp
  • Dry red chilli / Sukhi lal mirch - 2
  • Cashews / Kaju - 4 to 5 Halves
  • Onion / Pyaz - 1 Finely chopped
  • Ginger-green chilli-garlic paste / Adarak-hari mirchi-lahsun paste - 1/2 tsp
  • Tomato / Tamatar - 2 Finely chopped
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • Cooked rice / Pake huye chawal - 3 Cups
  • Clarified butter / Ghee - 1 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR SAUTEED PANEER :
  2. Heat ghee in a pan. Add paneer. Saute it for 3 to 4 minutes on low flame till it becomes nice golden brown. Stir it occasionally.
  3. Once done, take it out on a plate and keep it aside.
  4. FOR PREPARING TOMATO PANEER RICE :
  5. Heat oil in a pan. Add cumin seeds, mustard seeds, black gram, bengal gram, dry red chilli, and cashews. Mix well and saute it for a few seconds.
  6. Add onion and ginger-green chilli-garlic paste. Mix well and saute it for 1 to 2 minutes on medium flame.
  7. Further, add tomato. Mix well. Add salt, turmeric powder, all spice mix powder, and coriander powder. Mix well.
  8. Saute it for a few seconds. Now cover the pan with a lid and cook it for 2 to 3 minutes on medium flame. Stir it occasionally.
  9. Then add coriander leaves, cooked rice and clarified butter. Mix well with light hands and add coriander leaves cover the pan with a lid and cook it for 2 to 3 minutes on medium flame.
  10. Lastly, add sauteed paneer. Mix well and garnish it with coriander leaves. Take it out to a serving plate.
