Veggie Onion Rice is a quick breakfast option.

Veggie Onion Rice is a simple and easy to prepare dish. It is a colorful and healthy breakfast dish. It requires ingredients like turmeric powder, red chili powder, onion, red & green capsicum etc that are easily available at home. Also it requires leftover rice. Adding the lemon juice and coriander leaves makes it refreshing. Even, beginners can make this dish. So, try this recipe and let us know your feedback in the comment section.

Ingredients

  • Oil - 1 tablespoon
  • Mustard seeds/Rai - 1 teaspoon
  • Ginger/Adrak - 1 teaspoon grated
  • Onion/Pyaz - 1 no finely chopped
  • Green Chili/Hari Mirch - 1 no finely chopped
  • Onion/Pyaz - 1 no julienne pieces
  • Red Capsicum - 1/2 no chopped
  • Green Capscium - 1/2 no chopped
  • Salt - to taste
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Red Chili Powder/Lal Mirch Powder - 1 teaspoon
  • Leftover cooked rice - 1 cup
  • Lemon juice - of 1/2 lemon
  • Coriander leaves - to garnish

Instructions

  1. Heat oil in a pan. Put the mustard seeds, grated ginger, then add the finely chopped onion and green chili. Saute well.
  2. Now, add the the julienne onion pieces , chopped red and green capsicum, and salt to taste. Mix well. Put the turmeric powder, red chili powder and leftover cooked rice. Mix well.
  3. Cook the rice on low flame for 2 to 3 minutes. Keep the flame low and squeeze the lemon juice. Garnish with coriander leaves.
  4. The Veggie Onion Rice is ready to be served.
