Walnut Beetroot Raita is nutritious and lip-smacking raita for all. 

Walnut Beetroot Raita is colourful raita which uses beetroot, walnut, curd and some spice. This is a quick and easy side for lunch and dinner. This quick and easy raita which is very healthy. This raita is very good for summers as well as other days. Everyone will love this raita. Walnut added to the raita gives crunch and enhances the taste too. Beetroot is a very healthy vegetable but most of people don’t like to eat. By making this raita they will fall in love with this superfood. So, try to make this at home and let us know your feedback.

Tips and Suggestions by Mom Chef:-

  • You can add red chilli powder according to your taste.
  • Drain the water of the curd to make it thick. Use this thickened curd to make the raita.

Ingredients

  • Beetroot - 1 medium sized
  • Walnut Kernels - 8
  • Curd - 500 ML
  • Salt - less than 1/2 Teaspoon
  • Black salt - less than 1/2 Teaspoon
  • Roasted Cumin powder - 1 Teaspoon
  • Ghee/Clarified butter - 1/2 Teaspoon
  • INGREDIENTS FOR TADKA:-
  • Red Chilli Powder - 1/4 Teaspoon
  • Cumin powder - 1/2 Teaspoon
  • Ghee/Clarified butter - 1/2 Teaspoon

Instructions

  1. Wash, peel and cut the beetroot into 4 pieces. Then Pressure cook with half glass water for 2 whistle. Then let it cool completely.
  2. Keep 1 piece of beetroot aside for garnishing and grate other pieces.
  3. Take a bowl and add beaten curd, grated beetroot, salt, black salt, cumin powder.
  4. Roast the walnut with 1/2 teaspoon ghee. Keep some walnut for garnishing and crush the other pieces into small. Add this to the raita. Mix well.
  5. PREPARING THE TADKA:- Heat ghee in a pan. Add crushed cumin seeds and red chilli powder. Pour this tadka over raita. Mix well.
  6. Garnish the raita with beetroot slices, walnut and mint leaves.
  7. Delicious 'Walnut Beetroot Raita' is ready to be served.
