2 Types Of Rice include namkeen chawal and kesariya bhaat. It is easy to make on special occasions. These both are famous dishes for marriage functions. Kesariya bhaat is known as jarda pulao and it is a special dish for Vasant Panchami too. You can serve both rice dishes for a family function with the main course.   • FOR NAMKEEN CHAWAL :
  • You can use oil instead of ghee.
  • All vegetables should be sauteed on medium flame so, the spices don’t burn.
  • Add vegetables as per choice and availability.
  • FOR KESARIYABHAAT :
  • You can add turmeric powder instead of editable food colour.
  • The ratio of sugar to rice should be 1:1.

Ingredients

  • FOR PREPARING NAMKEEN CHAWAL :
  • Clarified butter / घी - 2 Tsp
  • Bay leaf / तेज पत्ता - 1
  • Dry red chilli / सुखी लाल मिर्च - 1
  • Black peppercorns / काली मिर्च - 4 to 5
  • Cloves / लौंग - 3 to 4
  • Black cardamom / बड़ी इलाइची - 2
  • Asafoetida / हिंग - A pinch
  • Mustard seeds / राई - 1 Tsp
  • Ginger / अदरक - 1 Inch grated
  • Green chilli / हरी मिर्च - 3 to 4 Finely chopped
  • Green peas / हरे मटर - 1/2 Cup boiled
  • Boiled potato / उबले हुए आलू - 1 Peeled and chopped
  • Turmeric powder / हल्दी पाउडर - 1/2 Tsp
  • Red Chilli Powder/ लाल मिर्ची पाउडर - 1 Tsp
  • Coriander powder / धनिया पाउडर - 1 Tsp
  • Salt / नमक - As per taste
  • Lemon juice / नींबू का रस - Of 1 Lemon
  • All spice mix powder / गरम मसाला - 1/2 Tsp
  • Cooked rice / पके हुए चावल - 4 Cups
  • Coriander leaves / हरा धनिया - For garnishing
  • FOR PREPARING KESARIYA BHAAT :
  • Water / पानी - As required
  • Rice / चावल - 1 Cup
  • Orange food color / केसरी नेचुलर फूड कलर - 1/4 Tsp
  • Sugar / शक्कर - 1 Cup
  • Clarified butter / घी - 1 Tbsp
  • Cloves / लौंग - 4 to 5
  • Dry coconut / सूखा नारियल - 1/4 Cup chopped
  • Dry coconut / सूखा नारियल - 1/4 Cup grated
  • Almond flakes / बादाम - 1 Tsp + For garnishing
  • Raisins / किशमिश - 2 Tsp
  • Cardamom powder / इलायची पाउडर - 1/2 Tsp
  • Pistachios flakes / पिस्ता - For garnishing
  • Tsp = Teaspoon
  • Tbsp = Tablespoon

Instructions

  1. FOR PREPARING NAMKEEN CHAWAL :
  2. Firstly, heat ghee in a pan. Add bay leaf, dry red chilli, whole black peppercorns, cloves, big cardamom, asafoetida, mustard seeds, ginger, and green chilli. Saute it for a few seconds on medium flame.
  3. Add boiled peas and boiled potato. Mix well and saute it for 1 to 2 minutes on medium flame.
  4. Further, add turmeric powder, red chilli powder, coriander powder, and salt. Mix well and add lemon juice.
  5. Add all spice mix powder and mix well. Now add cooked rice and mix well.
  6. Once done, finally garnish it with coriander leaves and take it out to a serving bowl.
  7. FOR PREPARING KESARIYA BHAAT :
  8. Firstly, boil water in a pan. Add the washed rice. Mix well and add orange food color. Boil it for 12 to 15 minutes on medium flame. Keep stirring in between.
  9. Once done, drain out its water and take out cooked rice in a bowl. Add sugar and mix well.
  10. Further, heat ghee in a pan. Add cloves and prepared rice mixture. Mix well.
  11. Add dry coconut, almonds, and raisins. mix well. Then add cardamom powder and mix well.
  12. Once done, finally garnish it with almonds and pistachio. Take it out to the serving plate.
  13. '2 Types Of Rice' are ready to be served.
