Aloo Bonda is a famous Indian snack.

Aloo Bonda is the all-time favorite snack. It is also a monsoon special dish. It mainly requires potato, gram flour and rice flour. For masala preparation the spices like green chili, ginger, all spice mix powder, dry mango powder, and red chili powder makes it flavorful. While, adding the carom seeds makes it easy to digest. The coriander leaves and green peas make it more tasty. With the easy to follow tips you can make your own batch of aloo bonda. Even, beginners can try it. Tips and Suggestions by the Chef:-

  • Adding rice flour to the batter of the bonda, makes them crispy.
  • In place of rice flour, you can use sooji/semolina.
  • If you want, you can add onion while making the potato filling mixture.
  • Green peas is optional.
  • If making the aloo bonda for the first time, use a spoon to put the bonda in the hot oil for frying.
  • If the batter is runny then, it will not bind with the potato filling mixture. And, if too thick then the bonda will taste dry.

Ingredients

  • FOR MAKING THE MASALA
  • Oil - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Green chili/Hari mirch - 1 no finely chopped
  • Ginger/Adrak - 1/2 inch finely chopped
  • Potato/Aloo - 2 to 3 no boiled
  • Asafoetida/Hing powder - a pinch
  • Salt - to taste
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Red chili powder/Lal mirch powder - 1/2 teaspoon
  • All spice mix powder/Garam masala - 1/2 teaspoon
  • Green peas/Matar - as required (parboiled)
  • Coriander leaves - a handful chopped
  • Dry mango powder/Amchur powder - 1/2 teaspoon
  • FOR MAKING THE BATTER
  • Gram flour/Besan - 1 cup
  • Rice flour - 2 to 3 tablespoon
  • Carom seeds/Ajwain - as required
  • Turmeric powder/Haldi powder - 1/4 to 1/2 teaspoon
  • Water - as required
  • Oil - for greasing
  • FOR MAKING THE ALOO BONDA
  • Oil - for frying

Instructions

  1. FOR MAKING THE MASALA
  2. Heat oil in a pan, put the cumin seeds, finely chopped green chili and ginger. Then, add the boiled and mashed potato. Put a pinch of asafoetida powder.
  3. Then, put the salt to taste, turmeric powder, red chili powder, all spice mix powder and mix well. Put the parboiled green peas, coriander leaves and dry mango powder. Mix well.
  4. Cook the masala for 1 minute. Turn off the gas flame and allow it to cool down. The masala is ready.
  5. FOR MAKING THE BATTER
  6. In a bowl, take the gram flour, add the rice flour, salt to taste, turmeric powder, rub the carom seeds in palm and then add. Mix together.
  7. Add water in small quantity and whisk it. Add water as required and make the batter of medium or pouring consistency. Rest for 10 minutes.
  8. FOR MAKING THE ALOO BONDA
  9. Heat the oil for frying.
  10. Apply oil on the palms and make small balls of the masala. Dip the small balls in the batter and put in the hot oil for frying.
  11. Fry from all the sides till it is golden in color.
  12. The Aloo Bonda is ready to be served.
