Aloo Puri | Potato Puri is a famous Indian dish.

Aloo Puri | Potato Puri is a delicious and savory dish. It is different than the aloo sabji with puri. It is a variety of puri dish like the palak puri, bedmi puri, puri etc. Here, the potato and wheat flour on kneading together makes a tasty dish. Along with the spices like red chili powder, carom seeds, all spice mix powder and turmeric powder, it becomes flavorful. Adding the coriander leaves, gives it a nice tinge of green color and makes it aromatic. So, try this recipe and let us know your feedback in the comment section.

Tips and suggestions by the Chef:-

  • Grating the potato is important. If you add mashed potato along with the wheat flour, the puri will break.
  • If you are using medium size potatoes, then take 2 potatoes.
  • Water is not required while kneading the dough.
  • After resting the dough, kneading it again with oil makes the puri soft and fluffy.
  • While frying the puri press it from all the sides, so that it becomes fluffy.

Ingredients

  • Wheat flour/Gehu atta - 1 cup
  • Aloo/Potato - 1 big size boiled
  • Salt - to taste
  • Turmeric powder/Haldi powder - 1/2 to 1 teaspoon
  • Kashmiri Red Chili Powder/Lal Mirch Powder - 1 teaspoon or to taste
  • All spice mix powder/Garam masala - 1 teaspoon or to taste
  • Carom seeds/Ajwain - 1/2 to 1 teaspoon
  • Oil - 1 teaspoon
  • Coriander leaves - as required
  • Oil - for frying

Instructions

  1. In a bowl, take wheat flour and put boiled and grated potato. Then, add the salt to taste, turmeric powder, Kashmir red chili powder, and all spice mix powder.
  2. Then, mash the carom seeds in the palms and put. Add 1 teaspoon oil and coriander leaves. Mix with the hands and knead with the hands.
  3. Keep adding the boiled potato as required for kneading the dough. Knead the dough to medium consistency and rest for 10 minutes.
  4. Take a small portion of the dough. Apply oil to the palms and knead it. Meanwhile, heat oil for frying. Apply some oil on the small portion of dough and some oil on the rolling pin.
  5. Roll to make puri. Place it in the hot oil, press slightly from all the sides, as it cooks and becomes fluffy. Flip and cook from other side. Take it out on the tissue paper.
  6. The Aloo Puri | Potato Puri is ready to be served.
