Aloo Matar Puff is a delicious snack from the Bihar.

Aloo Matar Puff is crisp puff with spicy peas and potato filling in it. This is a mouthwatering snack perfect for a rainy day or any time. You can easily make this snack with easily available ingredients. This is a deep-fried snack without onion and garlic so anyone can enjoy this yummy snack. The stuffing has a distinct flavour which comes from mustard oil. Everyone will love to eat this snack. So, try to make this puff at your end and enjoy Monsoon with your family and friends.

This puff was prepared by Sangeeta Kothari ji – a lovely Mom from Khagaria, Bihar.

Tips and Suggestions by Mom Chef:-

  • You can add onion and garlic in the stuffing.
  • We used 1 cup of refined flour and 1 cup whole wheat flour for the outer covering. You can use any of the flour to make it.
  • Fry the puff on a low-medium flame else it will not cook from inside.

Ingredients

  • INGREDIENTS FOR STUFFING:-
  • Matar/Green Peas - 1 Cup boiled
  • Potato - 1 Medium sized boiled
  • Green Chilli-Ginger Paste - 1 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Bay Leaf - 1
  • Kalonji/Onion Seeds/Nigella Seeds - 1/2 Teaspoon
  • Turmeric powder - 1/4
  • Red Chilli Powder - as per taste
  • Chaat Masala - 1/2 Teaspoon
  • Black Salt - 1/2 Teaspoon
  • Garam Masala/All spice mix - 1/4 Teaspoon
  • Salt - as per taste
  • Mustard oil - 1 Tablepoon
  • Coriander Leaves - a handful finely chopped
  • INGREDIENTS FOR OUTER COVERING:-
  • Whole Wheat flour - 1 Cup
  • Maida/Refined flour - 1 Cup
  • Salt - as per taste
  • Kalonji/Nigella seeds/Onion Seeds - 1/4 Teaspoon
  • Oil - 4 Tablespoon + for frying

Instructions

  1. PREPARING THE DOUGH:- Take a bowl and add whole wheat flour, refined flour, onion seeds, salt, 4 tablespoon oil for moyan. Mix well and knead medium soft dough using water. Cover and keep aside.
  2. PREPARING THE STUFFING:-
  3. Take a kadai, add mustard seeds and heat it.
  4. Add cumin seeds, bay leaf, onion seeds. Then add green chilli-ginger paste. Saute for few seconds.
  5. Then add turmeric, red chilli powder. Mix and saute. Then add boiled green peas. Mix well.
  6. Add mashed boiled potato. Mix well and cook.
  7. Then add salt, black salt, chaat masala, garam masala. Mix well and cook for a minute. Mash the mixture little bit using a masher or a spoon. Then switch off the gas.
  8. PREPARING THE PUFF:-
  9. Divide the dough into equal sized balls (as we take for chapati).
  10. Meanwhile, heat oil for frying.
  11. Take a dough ball and roll it to make small chapati.
  12. Put the stuffing in the centre. Now, fold it in half then apply some water on the edges. Cover it with another half. Fold the edges to make a rectangle pocket. Use water to seal the edges.
  13. Fry the puff on a low-medium flame until they turn nice golden brown. Once done, take them out.
  14. Delicious 'Aloo Matar Puff' is ready to be served with green chutney.
