Aloo Tamatar Ki Sabzi

Aloo Tamatar Ki Sabzi is a lip-smacking halwai style sabzi.

Aloo Tamatar Ki Sabzi is a quick and easy sabzi for all. This is a flavourful sabzi of potato cooked in tomato gravy with some whole spices. It goes well with roti/paratha/poori or even with chapati. You can make this sabzi with poori for Sunday brunch. This is a good option for lunch and dinner too. Moreover, it is a simple recipe using easily available ingredients. Everyone will love this sabzi because the potato is favourite of all. So, try to make this sabzi at your end and enjoy with everyone.

Tips and Suggestions by Mom Chef:-

  • You can use normal red chilli powder. But Kashmiri red chilli powder gives a nice colour to the sabzi.
  • You can add spices according to your taste.

Ingredients

  • Potato/Aloo - 4 medium sized boiled
  • Tomato/Tamatar - 2 medium sized
  • Cumin Seeds - 1 teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Bay Leaf/Tej Patta - 1/2
  • Black Cardamom - 1
  • Green Cardamom - 1
  • Laung/Clove - 2
  • Black Peppercorns - 3 to 4
  • Cinnamon/Dalchini - 1 small stick
  • Turmeric powder - 1/2 Teaspoon
  • Kashmiri red Chilli Powder - 1 Teaspoon
  • Coriander powder - 2 Teaspoon
  • Cumin powder - 1 Teaspoon
  • Garam Masala/All spice mix - 1 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1 teaspoon
  • Coriander Leaves - a handful chopped
  • Salt - as per taste
  • Ghee/Clarified Butter - 2 Tablespoon

Instructions

  1. Peel the boiled potato and break it in to small pieces with hands. Make puree of tomatoes.
  2. Heat ghee in a pan.
  3. Add cumin seeds then mustard seeds. Let the seeds crackle.
  4. Then add bay leaf, black and green cardamom, cloves, black peppercorn, cinnamon stick. Saute all the spices for few seconds.
  5. Then add tomato puree to the pan. Saute it.
  6. Add salt, turmeric powder, kashmiri red chilli powder, coriander powder, cumin powder, garam masala, kasuri methi/dry fenugreek leaves. Mix well and cook the masala until ghee leaves from side.
  7. Add the potato pieces, mix well.
  8. Add 1 glass of water to it. Mix well and bring it to boil on a high flame. Once boiled, add coriander leaves and switch off the gas.
  9. Delicious 'Aloo Tamatar Ki Sabzi' is ready to be served.
