Arbi Ki Sabji is a unique and flavorful sabji.

Arbi Ki Sabji is a delicious Indian dry curry dish prepared from taro roots along with a combination of spices. It is crispy, spicy, and a perfect scrumptious weekday meal. Firstly, it is deep-fried and then stir-fried with the spices. Arbi root is even richer than potato in starch content. It is also a good source of dietary fibre, protein, phosphorus, calcium, iron, vitamin A, vitamin C, thiamine, riboflavin, niacin and folate. This sabji goes very well with almost roti or paratha or naan or rice. Try to prepare the delicious and healthy sabji at home and enjoy it with family and friends. Ingredients

  • Taro root/ arbi - 1 bowl cut into large pieces.
  • Oil - as required
  • Ajwain/ carom seeds - 1 teaspoon
  • Hing/ asafoetida - 1/2 teaspoon (optional)
  • Green chili - 2 to 3 slit
  • Turmeric powder - 1/2 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Salt - as required
  • Coriander powder - 2 teaspoons
  • Roasted cumin seeds powder - 1/2 teaspoon (optional)
  • Water - as required
  • Dry mango powder/ amchur - 1/2 teaspoon
  • Coriander leaves - finely chopped as required

Instructions

  1. Heat enough oil in a pan and add arbi. Stir it occasionally and allow it to fry on low to medium flame for 12 to 15 minutes.
  2. Now, again heat oil in a pan and add carom seeds, hing, green chili, and fried arbi. Saute it well.
  3. Add, turmeric powder, red chili powder, salt, coriander powder, and roasted cumin seeds powder. Saute it properly.
  4. Further, add some water and saute it.
  5. Add dry mango powder and saute it for a few seconds and turn off the flame.
  6. Garnish it with the coriander leaves and mix it well.
  7. Delicious Arbi Ki Sabji is ready to be served.

    I make a similar dish except by boiling, peeling and slicing the arbi. No frying. The arbi remains slightly sticky which has its own texture and taste,
