Bachi Roti Ke Kofte | Leftover Roti Ke Kofte is a taste out of the waste recipe. The kofta made of leftover roti is cooked in the curd based gravy to make a yummy curry. This is a very simple ad easy to prepare with easily available ingredients. y making this curry you will use the leftover roti and everyone will enjoy a new type of curry. It goes well with roti, paratha even with rice. The good thing is you can serve the kofta alone as a snack. So, try to make this curry at home and enjoy. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • You can serve the kofta as a snack as well. Add grated paneer/cottage cheese or cheese to enhance the taste.
  • Use fresh curd to make the gravy.
  • Add curd to the pan at a low flame only. Keep stirring it continuously until the gravy it boiled.
  • Homemade cream/malai add thickness and make the gravy rich. However, it is completely optional.

Ingredients

  • INGREDIENTS FOR KOFTE:-
  • Bachi Roti/Leftover roti - 2 crushed
  • Boiled potato - 2
  • Besan/Gram flour - 2 Tablespoon
  • Onion - 2 to 3 Tablespoon
  • Ginger - 1/2 inch piece grated
  • Green Chilli - 1 finely chopped
  • Coriander Leaves - 1 Tablespoon chopped
  • Coriander Powder - 1/2 Teaspoon
  • Cumin powder - 1/2 Teaspoon
  • Red Chilli powder - as per taste
  • Salt - as per taste
  • Oil - as required for frying
  • INGREDIENTS FOR GRAVY
  • Fresh Curd - 1 bowl
  • Turmeric powder - 1/4 Teaspoon
  • Red Chilli powder - 1 Teaspoon or as per taste
  • Coriander Powder - 1 Tablespoon
  • Cumin powder - 1/4 Teaspoon
  • Salt - as per taste
  • Cumin seeds - 1/2 Teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Ginger - 1/2 inch piece grated
  • Green Chilli - 1 finely chopped
  • Homemade Cream/Malai - 1 Tablespoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Oil - 1 Tablespoon
  • Coriander Leaves - as required for garnishing

Instructions

  1. Take a bowl and add mashed boiled potato, gram flour, chopped onion, grated ginger, green chilli, coriander leaves, coriander powder, cumin powder, red chilli powder, salt, crushed leftover roti. Mix well.
  2. Make small balls of the mixture.
  3. Meanwhile, heat oil for frying.
  4. Fry the kofta balls on a medium flame until gonden brown. Once done, take them out.
  5. PREPARING THE GRAVY:-
  6. Heat oil in a kadai.
  7. Add asafoetida, cumin seeds, mustard seeds. Let the seeds crackle. Add grated ginger and green chilli. Saute for few seconds.
  8. Take a bowl and add curd, turmeric powder, red chilli powder, coriander powder, cumin powder. Mix well. Add this mixture to the pan at low flame. Mix well and stir the mixture continuously. Let it boil. .
  9. Add homemade cream/malai, Salt. Mix well.
  10. Add fried kofte to the gravy. Crush the kasuri methi and add to the gravy. Mix well. Cook for a minute then switch off the flame.
  11. Delicious 'Bachi Roti Ke Kofte | Leftover Roti Ke Kofte' is ready to be served. Garnish it with coriander leaves and serve it hot.
